I'm going to conquer the four seasons for now ✨🍧. I was imagining a refreshing summer sake since it was described as schwashwa on the liquor store's website 🤔. But it was a classic, dry and crisp with a strong umami flavor 😳. It would go well with summer gutsy dishes 😊. Next time I'll try it in the fall 🍁.

At a restaurant in Nagaoka that has a good reputation for its food and a selection of sake from outside of the prefecture. I asked for Tetorigawa, which has recently been my boom 🙂. It seems to be fire-aged, but there is a slight fizzy feeling 🫧. Fresh and moderately fruity. Light and refreshing, with plenty of umami, but light and pleasant to drink 😦. I like this sake too 😆. The label says "daily junmai sake" and when I asked the owner about it, he said it wasn't expensive... I think this is a great everyday sake ✨. I saw Yahiko Musume on the corner of the menu, so I ordered it, and it was cut from the branch and boiled ❕. Edamame is freshly boiled after all👍. Very different 💦 from the ones I boiled myself. They are pros! 🙇‍♂️

The spread of the acidity from the mid-palate is also intoxicating, and the intoxication subsides relatively quickly and calmly. Serve cold. It has a sweet aroma like cotton candy and a dry, slightly mellow taste. Omachi rice is used for sake brewing, and the fullness of the flavor was apparent. The deliciousness of the rice is fully expressed! Ok as a stand-alone sake, this is a dark but refreshing bottle that will not be overpowered by strong-flavored snacks. This sake is rarely seen outside of Ishikawa Prefecture, and is only available in the prefecture. It is a wonderful sake that can only be found in the prefecture.

I went to the Holy Land because the lottery had started. I was looking around with the intention of bringing home some summer sake, but there were so many things to choose from that I got lost. As expected of the Holy Land, the lineup on the shelves has changed drastically since last week 🍶. The one I chose was Yuho from Ishikawa Prefecture's Goso Sake Brewery. The sake is brewed in Hakui, in the middle of Noto! The label was designed by a high school student from Hakui, so it's very summery. It really stood out at the sanctuary! I had heard that it was dry, but it was well-balanced and very light. The aftertaste and lingering aftertaste were very refreshing. I thought I would bring it home again if I came across it!

[Voluntary aging in store! 😳] This nigori nama sake touts its freshness, but the production date is November 2023... 🤔. I don't know if they aged it on purpose or if it was just unsold until now, but I'm interested in the taste after aging it in the store for about 6 months 😁. The gasiness that the label says on the back has almost disappeared and my first impression was that it was somewhat lacking, but after the second day my impression changed completely and I found the contrast between the rich umami and the solid bitterness to be an interesting sake 😊. It has a very deep flavor, and if this is what the store was aiming for, it's just amazing... 🙇.

I was shocked to hear the news that sake breweries in Ishikawa were devastated. Is the recovery progressing? I often hear the news that aid is not getting to those in need 😞. I hope that all kinds of support will be provided and the devastated sake breweries will be able to recover. As for the taste, it has a gentle sweetness and well-balanced acidity 😋...it's really delicious 😋😋 I want to drink it again next year!

Okunoto's Shirakiku was brewed by Kuroemon XVI with rice left over from Shirakiku's sake brewery due to the earthquake disaster. When you hear such an episode, you have no choice but to drink it. I tried it with a classical sake-like image, but it was too easy to drink and too delicious, with an exquisite sense of balance. It is good.

Since I had business in Kanazawa, I chose to drink Kaga and Noto sake...at night. However, Omimachi Shokudo was out of Takeba, so I went to another restaurant that had it in stock. The sake is a great complement to the snacks we had with it. It was so good that I went looking for it in Kanazawa Hyakubangai and bought a bottle. It is a treasure of Noto that I don't want to lose.

Support Noto by drinking at home. Takeba", a famous sake from Kazuma Shuzo in Noto Town, was brewed into sake by Kurumata Shuzo in Hakusan City. It is a refreshing and delicious sake. Good luck, Noto!
