The aroma is almost banana. There is a grain aroma in the back, which gives you a sense of umami. The wine is labeled as dry, so I imagine it is suitable for mid-meal. It was served at a cool temperature. Sweetness and umami are still strong. Not much bitterness or acidity. I didn't have an image of a dry sake, but as I sipped it two or three times, I could clearly see the sharpness of the sake with the arugula. By finishing it without leaving a lingering aftertaste, the balance between sweetness and umami is well balanced.

We had this the other day. Takayama Junmai Nama Shuzake from Kosaka Shuzo in Yonezawa City, Yamagata Prefecture, for the first time. It is a mellow sake. From the grain aroma, the umami spreads at once with a surprising acidity, and the finish is quick. It has an image of umami, so I think it would be good with grilled fish, simmered fish, or carp in sweetened soy sauce, a specialty in Yonezawa.

Junmai Sake is the fragrance of dreams (Kaori) Introduced in Reborn Kura in dancyu 2022. Mr. Kobayashi, the brewery owner, is from Chiba. His mother's family owns a brewery in Aizu Misato-cho. He used to work for an IT company, but when he heard about the demolition of a sake brewery, he became a brewery owner. The brewery reopened in 2020. Mr. Kazunori Inomata, who was also involved in the production of Tobiroki, is the master brewer. The name was changed from "Wa" to "Kai" this year! Fresh and fruity, but with a strong umami, bitterness, and overall well-balanced sake quality. I first encountered it at a sushi restaurant in 2021, where it was introduced as a recently reopened restaurant, and at that time I just loved it and became a fan!

Maker relaunched with Naeba Sake Brewery in 2013 from Takizawa Sake Brewery. This sake is a collaboration with Oyado's Brewing Forest, and the brewmaster is 28 years old! Normally, sake is brewed in three stages: Soe, Naka, and Tome, but Kozo-Sumori uses only one stage soe. The sake is made with a low alcohol content and requires a delicate brewing process. It is fresh and delicate, but the umami of the rice, which comes from the single-stage brewing, spreads from the latter half of the brewing and has a good sharpness. Even though it is sweet, you will not get tired of drinking it.
