Takayama Junmai Nama Shuzake from Kosaka Shuzo in Yonezawa City, Yamagata Prefecture, for the first time.
It is a mellow sake.
From the grain aroma, the umami spreads at once with a surprising acidity, and the finish is quick.
It has an image of umami, so I think it would be good with grilled fish, simmered fish, or carp in sweetened soy sauce, a specialty in Yonezawa.
