Maker relaunched with Naeba Sake Brewery in 2013 from Takizawa Sake Brewery. This sake is a collaboration with Oyado's Brewing Forest, and the brewmaster is 28 years old! Normally, sake is brewed in three stages: Soe, Naka, and Tome, but Kozo-Sumori uses only one stage soe. The sake is made with a low alcohol content and requires a delicate brewing process. It is fresh and delicate, but the umami of the rice, which comes from the single-stage brewing, spreads from the latter half of the brewing and has a good sharpness. Even though it is sweet, you will not get tired of drinking it.
