There is a grain aroma in the back, which gives you a sense of umami.
The wine is labeled as dry, so I imagine it is suitable for mid-meal.
It was served at a cool temperature.
Sweetness and umami are still strong.
Not much bitterness or acidity.
I didn't have an image of a dry sake, but as I sipped it two or three times, I could clearly see the sharpness of the sake with the arugula.
By finishing it without leaving a lingering aftertaste, the balance between sweetness and umami is well balanced.
