Let's start with the standing aroma. Sweet cemedine smell. It's been a long time since I've tasted a cemedine ❗️. The sweetness of the rice comes first in the mouth, followed immediately by a sharp, full-bodied acidity, and finally a crisp aftertaste and umami that spreads out in a jiffy. The taste has a strong core, but is also gentle. It's a cemedine type sake, but it's a clear sake that doesn't feel old 🍶I personally like the taste 😊.
First, with homemade squid meatballs. The combination of the flavor of the squid meatballs and this sake makes it easier to drink as the acidity mellows out while the cemedine taste remains. It's a great drink!
Next, I served it with some kind of shellfish miso. The sourness is increased by the addition of butter, and the taste becomes refreshing.
