Ja jaan❗️ opened a bottle of Tojo today 😆 I'll do a taste comparison with Yoshikawa later. Let's start with the standing aroma. The aroma is slightly sweet and sour. In the mouth, it is juicy, soft and sweet, with a citrus-like acidity and a slight bitterness at the end. The taste lingers for a long time. Yoshikawa is less sweet and has a smooth, clean taste. If I had to say, I would say that the Yoshikawa is more suited for a mealtime drink. With fish paste. The sweetness and umami of this sake is enhanced when paired with octopus paste. It may go well with ingredients that are not too sweet. Next, with fried burdock root. The sweetness of Mita is moderate here. Personally, I think Tojo is better on its own, and Yoshikawa is better as a pairing. Both are delicious, though. Rice: 100% Yamada-Nishiki from Tojo, a special A district rice produced in Hyogo Prefecture. Yamadanishiki 100%. Polishing ratio] 35%.
