Sakemai is used as the sake rice. It is said that this rice is produced by the 14th brewer of Takagi Shuzo and has a hard and refreshing taste. The color is almost colorless and transparent. The taste is sweet and sour, like white peach compote or cherries on a parfait. A slight astringency remains in the aftertaste, tightening the lingering aftertaste. It is very delicious. The Yamadanishiki Jun Gin I had before had more pineapple and fruity explosion, but this one is a little cooler. This one is a little cooler. It matches perfectly with sashimi of sea bream (lemon soy sauce). I want to repeat it. 9/10

It seems to be a lightly muddled sake of modern Senkou. The aroma at the opening of the mouth is a hint of apple. The sourness is fully felt, and a bitter aftertaste remains. It seems to be a sake to enjoy the acidity characteristic of Senkou rather than the umami. To be honest, I don't think I like it that much. However, a few days after opening the mouth, it started to emit a gorgeous aroma like something else. In addition to the sourness, the taste also increased in sweetness, and it was like drinking apple juice. This is what it means to open up the taste. It was so good that I couldn't believe it was the same sake. 8/10

It is said to be an improved version of Shinkou 190, which has Kame no O in its parentage. The taste is like the color of the label, pineapple in full bloom. This is the first time I've been able to buy the Jishin I've always wanted. The color is so clear and colorless that it is hard to believe it is unfiltered. It has a rich, mellow, sweet and sour taste that seems to spread to every corner of the sake. The taste was tropical, like pineapple. After a quick break, a lingering sweetness lingers fluffily. It's insanely delicious! I did notice a roughness to the taste about a week after opening, so it might be a good idea to drink it sooner rather than later. 9/10

Numérosis" Salmon Erotic Using yeast No.6 A winery in Nagano brews a little bit of this sake during the winter. I wanted to try it at least once, so I was lucky to buy it. It has a strong acidity on the palate, and bitterness and astringency linger in the aftertaste. It has a gorgeous attack and a strong aftertaste. It's not flashy because it's a No. 6, but it's mature and it's good. 7/10

Senkou Organic Natur 2021 <ZERO:nigori There is no foam when the bottle is opened, and the orifice does not come to the surface. It is quiet for a nigori.
