It seems to be a lightly muddled sake of modern Senkou.
The aroma at the opening of the mouth is a hint of apple. The sourness is fully felt, and a bitter aftertaste remains. It seems to be a sake to enjoy the acidity characteristic of Senkou rather than the umami. To be honest, I don't think I like it that much.
However, a few days after opening the mouth, it started to emit a gorgeous aroma like something else. In addition to the sourness, the taste also increased in sweetness, and it was like drinking apple juice. This is what it means to open up the taste. It was so good that I couldn't believe it was the same sake.
