The sake shop recommended that this year's sake has a good balance and can be drunk cold. Cold: The aroma has a mysterious sweetness, like bread. The taste is heavy, and to be honest, it's not my type. I'm sorry, but I thought it was inevitable that it would end up as a cooking sake. Warmed: The heaviness disappears and the sweetness comes to the fore. This is the first time I've heated it at home, and it's delicious. 6/10

New Year's bottle 2021, I'm glad I got it. At first sip, it tastes and smells like muscat. There's also a hint of gas because it's raw sake. I knew that Tasake was good. This is the taste that made me fall in love with sake in the first place. I drank it easily, but I was surprised that the alcohol content was surprisingly high at 16 degrees. 9/10

This is the unusual series of the instrument Masamune. Although it is undiluted sake, the alcohol content is 12 degrees, making it quite easy to drink. The taste is also free of miscellaneous flavors and has a refreshing aftertaste. 8/10

The same Asahi Shuzo as Kubota. It is surprisingly odorless. The mouthfeel is quiet, with a slight creaminess and mellowness in the aftertaste. It has a light and dry taste. When the temperature is raised a little, the taste opens up at once. You can feel the creaminess in the front rather than the fruity taste. 5/10

Chrysanthemum Snow Crescent Yamada Nishiki is used. Lightly cloudy. It has a grapefruit-like acidity and a fullness. On the second day, the acidity was suppressed and the umami stood out. The second day was much more delicious. I spent the New Year's holidays happily with this sake. 9/10

Koei-Kiku Non-filtration Raw Raw Sake Sunburst Specifications Alcohol content: 13%. The colour was slightly yellow. The aroma was fairly mild. In the mouth, it has a popping sensation due to the gas. The taste was highly acidic, as if brewed with white koji. There was a burst of acidity. In addition, I also sensed some sweetness like a melon. Even in the aftertaste, a sour taste like grapefruit remains. Perhaps because of the low alcohol content, the unique unfiltered raw sake taste was almost non-existent. When you are not careful, you can drink it with a good gulp. It was delicious. I feel like I've been drinking a lot of this kind of sake lately, like Amaneko, Denshu and Hakusei. 8/10

KAYO YOSU Junmai Daiginjo Non-Filtered Raw Sake Specifications Alcohol content: 16%. Rice polishing rate: 48%. Raw rice: 100% Gimpu When you open the bottle, a gorgeous aroma spreads out. The taste can be described in one word: sweet and sour. The sweetness and acidity are very strong, and there is a bitterness that lingers in the finish. It's said to taste like a pineapple, but in my opinion, the bitterness is more like a grapefruit. I felt that it was a good choice. When I find a four-bottle bottle at the liquor store, I can't resist buying it. 7/10

Tanaka Rokugo K65 Rawstock 2018/2019 The first sake from Shiraito Shuzo Brewery to be brewed from scratch. The taste is modest compared to the classic Tanaka Rokujugo, but the 2019 has a stronger taste. and it was my personal favorite.

peach-colored mountain airplane Specifications Alcohol content:15.8%. Rice polishing ratio: 50%. Name of rice: 100% Shinjo (improved) Yeast used: Society 6 The sake from Shinsei Hanpukai was often on my timeline and I wanted to try it. We found it in an izakaya and naturally ordered it. The aroma was mild, and the taste was sweet and sour. I thought it tasted just like lapis, and I heard that Yamayu itself was the forerunner of Colors. I think Shinsei's sake has a really unique taste. 7/10

Ingredients: 100% Miyamanishiki Rice polishing ratio: 55% koji rice, 55% koji on rice Yeast used: Society 6 Fermentation vessel: wooden vat What can I say, this is the first time for me to drink a Colors work. It has a unique sweet and sour taste that is similar to the other Shinsei series. Even if you drink it blind, I think Shinsei is the only one you can guess. 7/10

The smell is quite mild. The taste is unique to the unpasteurized sake, with a faint sense of gas. It has a pleasant acidity and a slight bitterness that lingers in the aftertaste. It was easy to drink, but the sake was very strong. 7/10

Name of rice: 100% Akita Sake-Komachi Yeast used: Society 6 Low-polished 90% version of noble sake It is refreshing like a pear, yet deeply flavorful. The color is yellow like a low-polished nirvana tortoise. It has a strange taste that it is a noble brew with a sour taste at the same time. 7/10

The color is cloudy with a light green hue. The intense, eye-opening taste is unique. What is your favorite sake at the moment? If you ask me, I'll tell you that I'm a 14yo and that I'm an archaeologist. I like it that much. 10/10

Used for: Regular, unfiltered malt liquor, bottled in a warmed fire Drinking temperature: 10-15 degrees The colour is slightly yellow. The aroma is fresh and cheese-like, with a hint of freshness. The taste is also cheese-like and vanilla-like in its acidity, which is typical of Xianfeng fowl. The taste was a combination of normal Xianghuai with more depth. It would go well with dairy products. 8/10

Flax Cat via Specifications Special recipe: Blended sake Rice: 100% sake rice (from Akita prefecture, harvested in 2019) Yeast used: Society 6 This is a chimera sake blended with You no Tori and Nirvana Kei via Flax Cat. It has a characteristic citrusy sourness that seems to bloom in a flash, with a hint of sweetness behind it. Is there still more flax cat ingredients? It was easy to drink at 13 degrees. 8/10
