こーへい
Sakemai is used as the sake rice. It is said that this rice is produced by the 14th brewer of Takagi Shuzo and has a hard and refreshing taste.
The color is almost colorless and transparent.
The taste is sweet and sour, like white peach compote or cherries on a parfait. A slight astringency remains in the aftertaste, tightening the lingering aftertaste.
It is very delicious.
The Yamadanishiki Jun Gin I had before had more pineapple and fruity explosion, but this one is a little cooler.
This one is a little cooler. It matches perfectly with sashimi of sea bream (lemon soy sauce). I want to repeat it.
