This sake is made with naturally grown rice and no yeast added, with a brewer's yeast. It is said to have a melon aroma, but since it is the last part of the bottle, I didn't detect much of that. Now I want to drink it right after it is uncorked.
Junmai Ginjo-shu, brewed in deep pursuit of mellow umami-kuchi, has a soothing taste with a balance of subtle aroma and a gentle, penetrating umami that is pleasant and penetrating.
