It is not a very sweet sake. It does not taste similar, but it has a mouthfeel like amazake and conveys the taste of rice. It is a sake to drink after a meal.
This sake is made by a female toji. It is a modern sake that is easy to drink even for those who do not like sake, with a light taste and a sweetness that spreads on the palate at the end. I would like to drink it again if I were a person who does not like sake or if I were to drink it before a meal.
Purchased at a sake shop in Higashi-chaya-machi during a trip to Kanazawa. This sake was made by the brewery where Mr. Noguchi was working. It was easy to drink like water and had no peculiar taste. I had it with pickled puffer fish, which I bought at a dry pickle shop in Higashi-chaya-machi.
Although it is called "super dry," it does not seem to be that dry. When drunk by itself, it did not leave a strong impression, but when paired with seafood such as salted squid and fresh shirasu (baby sardines), it was a perfect match, bringing out the flavor of both the sake and the seafood.
It didn't seem to have any significant peculiarities or aroma. Therefore, it is easy to drink. It can be drunk naturally and easily like water. I would definitely like to try the other Masumi.
It has a fruity sweetness in the mouth, followed by a slight spiciness with a slight fizz. It's not boring, and so far I've been able to repeat it again.
In my mouth, I enjoyed the various aromas along with the fruity scent of peaches. The taste was refreshing. The rest of the taste was not that impressive, probably because the impact of the initial aroma was too strong.
