This was my second drink following Toyooka. I chose the "cold shabu kimchi yakko" which I was more interested in than the Urume no maruboshi seared fish, which definitely matches sake. It is less aromatic and more refreshing than the Toyoka. I think it goes perfectly with Kawarayaki.
Pre-ordered the Kawarayaki. I ordered it thinking that the dry taste would go well with it, and it was perfect! It was. It also has a light shwashiness to it and washes it down nicely.
I bought this on a trip to Hokkaido at the end of August and forgot to put it away in the fridge.
It has a firm flavor with a refreshing acidity.
Tonight's entrée was grilled salted mackerel and octopus kimchi. It is a perfect match for a poor dinner at my new home, and I can drink it with a sip.

The word "Tomi" (from Tomiyama Prefecture) on the menu caught my eye and I ordered it. It is mellow and has a strong flavor.

It's been a long time since I've had a long, leisurely drink in Toyama. (Probably since I came here more than 20 years ago.)
The names on the menu were all unfamiliar to me. I chose "Tateyama Honjozo" as I thought it was probably the top recommendation.
It is a food sake with a robust flavor that goes well with a variety of dishes. It is a reasonably priced sake to be enjoyed for everyday drinking.
I traveled to Hokkaido for the first time in 12 years. Although I enjoyed a gourmet meal there, I unfortunately did not have a chance to taste any sake produced in Hokkaido, so I bought some Kaminokawa Taisetsu as a souvenir, which I could not visit due to a lack of time.
The sake has a modest aroma, a clean mouthfeel, and a strong lingering umami flavor. I wished I had enjoyed it when I ate and walked around in Hokkaido, and vowed to revisit it while having a drink with a side dish from a convenience store.

The summer before last, when the new virus infection situation had settled down. When I visited Sakaiminato City, I bought a bottle and opened it.
Although it was left at room temperature, it did not seem to have deteriorated, and it is delicious with a clean, dry taste and a strong flavor.

I went to a sake bar that I have been interested in for a while. I had the Iburi Gako Cream Cheese and Dried Squid to go with it. As it says, it is a delicious sake that envelops a variety of dishes.

There is not much sweetness, and after drinking, the astringent and bitter taste will remain in your mouth.
