The aroma is lush peach. Muscat. In the mouth, fresh pineapple and peach fruitiness with a gassy sensation and mild syrup sweetness. As it is swallowed, a hint of acidity rises to add even more freshness. The lingering sweet-sour and pungent taste leaves a complex impression. The overall impression is one of refreshing, fresh sweetness all around. Toyokko is sweet to the taste, but never lingers, the acidity and spiciness cutting through the sweetness and lingering on refreshingly! It's wonderfully good!!!

I see that Sakiyami is Miyamanishiki only. I did not know that! No. 9 yeast. The aroma is fruity, reminiscent of sparkling peaches. Slightly astringent fermented rice flavor. On the palate, there is a cemedine-type chemical feeling and pineapple sweetness. The mouth is filled with a sourness like that of plums or pure rice vinegar. As you swallow, bitterness gradually takes over and rises, followed by nuts and grains, and a complex aftertaste of sweet, bitter, and acid! Overall, it is mainly sweet and sour, and when opened, it is a refreshing chemical type with a gaseous feeling. As the gassiness wears off, it becomes more complex and more nutty and almondy, while still being mainly acidic! At room temperature, it also has plum and cherry-like flavors. It gave me the strange impression that it varied a lot with temperature! I bet it's good!

The lingering sweetness and bitterness, like Japanese sweets, continue pleasantly. Flavors like brown sugar and sake buns. It's umami, but not too heavy and well-balanced, so it's good even during a meal! It's good!

Shinkame's Spring Sake, also known as Sprite! The aroma is of aged rice with a weak but mature hiney aroma. Slightly sweet mochi. There was also an earthiness. On the palate, the flavors of rice and grains cooked on a medium scale are well pronounced. As soon as it is swallowed, a dry spiciness and soft bitterness rise throughout. The lingering taste is a complex combination of alcohol, spicy bitterness, and sweetness that leaves a complex impression. It has a firm sake-like character with a dry, spicy, bittersweet taste that gives a sense of spring. As the temperature rises, so does the sweetness and umami! I love the springiness of the pink label and the stoic Shinkame lettering!

As you swallow, it rises as it should on the palate. A spiciness slowly emerges from the back, leaving a strong bitterness in the aftertaste! It is a sake suitable for a meal with little assertiveness, but the lingering bitterness gives it presence. The female toji's smile on the back label soaks it up! Yum!

The wine seemed a bit watery when opened, so I thought it would be better to give it some time after opening the bottle.

The flavor is sufficient and the acidity and spiciness are in balance. Best of all, it's reasonably priced, which I think is great for the cost! It's good!

In the aftertaste, a pleasant spiciness runs through. When served cold or at room temperature, it is crisp and spicy. When warmed, the sweetness increases and the flavors of banana and pear cider appear, making it very delicious. This is a great sake to keep in a bottle and enjoy the changes over time!

I was lucky to find you! The aroma is of gorgeous tropical fruits. Sweetness of papaya, mango, and pineapple. Slight flavors of white bean flour and rice in the back. In the mouth, there is a slight sweet strawberry and berry fruitiness. As you swallow, a firm bitterness appears and rises, tightening the whole. The aftertaste is dry and refreshing with a lingering sweet bitterness. Despite the gorgeous and sweet aroma, the mouthfeel is unexpectedly dry and has a gap. My preconceived notion that Hanayo-yoku and Yamadanishiki would be sweet was overturned! Hanayo-yoku is not just pineapple! It is unquestionably delicious!

Overall, the impression is refreshing and clean from start to finish. Great balance of umami and acidity! Contrary to its hardcore label, this is an elegant, refined, and overly delicious sake! The nickname "Cider Kitajima" is not a fluke! Personally, I think I like it even more than Kaze no Mori!

The fortune was a super big one! The aroma is understated but sweet and honeyed with muscat and apple. On the palate, it has a mellow, gently rounded, elegant syrupy sweetness and a juicy apple feel. As you swallow, a dry, strong bitterness and astringency appear and rise. It is moderately crisp and leaves a slight rice flavor in the aftertaste. When the bottle was first opened, the bitterness was very strong and uneven. However, after about three days, the bitterness has disappeared and it is now nicely integrated. It has a nice sweet flavor, juicy and elegant. Yum!

SNOW CRESCENT 100% Yamada Nishiki The aroma is of soft vanilla and cream. Gentle rice sweetness and lactic acidity. You can imagine white chrysanthemum flowers! On the palate, silky and elegant Japanese Sanbon-like sweetness on a slightly smaller scale, and the impression of sweet and sour Calpis with a good citrus acidity. As you swallow, the acidity extends further and rises while keeping the sweetness in check. In the aftertaste, a little refreshing spiciness rides on and it is crisp, but sweet, bitter and sour are complicatedly intertwined. When cold, it is light and has a mature impression. As the temperature rises, the acidity becomes more assertive and complex. Personally, I find it too light and not enough. It is low alcohol, easy to drink, and stylish with fruity acidity. I can see why it's so popular! Delicious!
