Special Junmai Hitogokochi Unfiltered Nama-shu
The nose has a slightly peculiar yeast and rice flavor. There is also an astringency. Melon sweetness with cemedine in the back.
In the mouth, the soft and gentle sweetness of Hitokochi rice fills the palate. It is rich and slightly bitter. The umami is also strong.
As you swallow, the sweetness rises in a complex mix of bitter and spicy tastes, and the lingering taste is firm and sweet like carmine sugar.
When warmed, it has an even greater umami flavor and a heavy, yet mild and moist sweetness.
This is good sake! It's delicious.
I could feel the full potential of Hitogokochi!
