It tasted just as the owner described, sharp and sharp!
I thought it would have a strong umami flavor, but it didn't. It had a light bitterness at first, and for some reason it tasted like a wooden vat. Well, I don't dislike it.
I did not read the label when I bought it, but what kind of rice is used to make 100% sake brewing rice? I can only wonder if there is something in it that makes it impossible to write "Sake Brewing Rice.

Yokoyama Goju was recommended to me at the store as being in stock today.
I didn't buy the black label because I had an image of a super dry sake.
But I was attracted by the freshly squeezed, direct-drafted sake, so I bought it.
It was completely different from my preconceived image: it was a fruity daiginjo with a thick, sharp finish.
I was so pleased with the taste that I even reexamined the label to see if it was a pure sake, and I made the right choice.
It is a pity that it is not unfiltered or it does not have the freshly squeezed taste of freshly squeezed sake.

Freshly pressed light nigori sake, which is only available once a year. I reserve a bottle every year and look forward to it.
Since my house is close to the brewery, there is little deterioration from the movement of the sake, and the freshness and sizzle are wonderful.
I look forward to it every night because the impression of the freshly pressed sake changes over time.
