I think the flavor of sake is lost, perhaps because the bottle heating process is not suitable for sake.
I think that a short time fire-cooling like Joule heating would be better suited for sake.
I would like to drink it again when it is fresh sake.

The first Collage is a Junmai Ginjo that is sold all year round.
The price is around 4,000 yen per bottle, which is within my acceptable range, so the only choice was the Junmai Ginjo for 3,970 yen.
It's once-fired, but fresh, mellow, and delicious.

I bought another version of Hououmida Junmai Daiginjo 50 Polished because I enjoyed the Hououmida Junmai Daiginjo 50 Polished so much that I drank it before.
It has a mellow Aizan-like flavor with a sharp and bitter taste.

My first Akabu started with a basic junmai sake.
I like it for its mellowness and aroma, which is hard to believe it is junmai sake.
