Since Yokoyama Goju White was not yet in stock, I bought Shikishima Light Nigori, a revived brewery in Handa that I had been curious about for a while.
It tasted just as the owner described, sharp and sharp!
I thought it would have a strong umami flavor, but it didn't. It had a light bitterness at first, and for some reason it tasted like a wooden vat. Well, I don't dislike it.
I did not read the label when I bought it, but what kind of rice is used to make 100% sake brewing rice? I can only wonder if there is something in it that makes it impossible to write "Sake Brewing Rice.
