It has been a long time since I drank Shinsei at home. When you drink it, it has a beautiful acidity that is typical of Niimasa. It has an excellent balance between the depth of flavor, sweetness at the attack, and astringency in the aftertaste. I liked it best when drunk before a meal when it was cold and snow-cooled. ⭐️⭐️⭐️⭐️⭐️ Purchased previously at Yamada Sake Shop.

The fresh aroma, which reminds one of rumune, is moderate. When you drink it, the aroma of rice and grains that passes through to the nose gives a strong impression of freshness from the freshly pressed sake. It is delicious. The cleanliness that is typical of jungin is balanced by the roughness and bitterness that is typical of freshly squeezed sake. ⭐️⭐️ Purchased at the sake shop Yamada. It was a solid impression sake that fit the concept of the product, but personally I felt it was a bit pricey for a home-drinker, considering that I could buy local Sakurafukiyuki Shiboritate for about half the price. The flavor deteriorated quickly, so it tastes better if you open the bottle and drink it as soon as possible.

The nose has a dark, sweet and gorgeous aroma of melon and white peaches. When you drink it, you can taste the sweetness and bitterness at the same time, and it is nicely balanced with the chili sensation on the tongue. I liked it better after a few days than right after opening the bottle, as it seems to be more balanced. It is a sake to be enjoyed by itself rather than with a meal. ⭐️⭐️⭐️⭐️⭐️ Purchased at Ishikawa Sake Shop. I was a little hesitant when I bought it because it is not cheap for home drinking, but it was a very satisfying sake.

This bottle was recommended to be paired with seafood such as squid sashimi. The fresh green apple-like aroma is subtle. It has a round, full-bodied, dark umami flavor, while the acidity tightens the flavor profile and the aftertaste is crisp and clean. ⭐️⭐️⭐️⭐️ Purchased at Yamatoya Shuho. I drank it all before I had time to warm it up, but it tasted delicious even when warmed.

This year, it was brewed with Hachitan-Nishiki. Immediately after opening the bottle, the aroma had a GF-like quality, and the 14% alcohol by volume combined with a light gaseous taste made it easy to enjoy. After a few days, the umami and acidity from the sake yeast came out a little, and I also felt a green apple-like fruitiness. ⭐️⭐️⭐️⭐️ It is very satisfying because of the special feeling at the beginning of the year, but in the case of Hiran, the comparison target is also Hiran, so I would like to drink it again: ⭐️ four times. I went to a liquor store in front of the station a few times after New Year's and asked if it was in stock. When I asked them if they had it in stock, they told me that it had already been sold, and I bought it at the same store where they had a large quantity at the end of January.

Melon nuances from the standing aroma to the end of the bottle. The lees are a bit low for an orikara sake. To put it roughly, it is a sweet and juicy sake with a gaseous taste, and like Kangiku from the same prefecture, it is a less fashionable sake. The first time I opened the bottle, I felt it was a little stiff, but the next day or later, I felt the flavor was more expansive and I liked it better. The store staff recommended that the price is the same and the quantity is larger because it is basically the same as Setsugetsuka, although there is a difference between year-round and limited edition 😅Because it costs 5,000 yen for a 4-gouple bottle, I am not sure I would drink it again, but I would be very happy if I received it on my trip to Kyoto, as a gift or as a souvenir. It was a high quality sake that I would be very happy to receive as a gift or souvenir from Kyoto.

When you sip it, the acidity derived from the sake yeast is subdued, and you can sense a somewhat flabby sweetness and umami flavor. After enjoying the wine slowly in the mouth, a grain-like aftertaste, which reminds one of rice origin, passes through the nose. The strong effervescence from the secondary fermentation in the bottle made it impossible to open the bottle in one go, even when chilled to a crisp. The nose has a hint of apricot and lychee aromas with a slight rice powder nuance. It is a dry and dry muddy sake with a core of acidity from the sake yeast, and it is easy to drink. I thought it would be delicious as a heated sake. Available at ⭐️⭐️⭐️⭐️ Purchased at the sake shop Yamada. There was a feature on a local Sanshiro MC TV program, focusing on the replacement representative Fujii. They showed pictures of him studying abroad, saying that he had no intention of taking over the brewery, and other such things. Even if it is just a local brewery, there are many breweries that have no intention of taking over the brewery, but came back after their father fell ill after finding a job, or they are into windsurfing in the summer, or they boast that no one in the local area knew their name. It is a niche market to begin with, and newcomers are doing their best in various ways, but I personally think that their sense of style is old-fashioned, or they are putting a damper on the excitement. Good food is good even without such introductions.

Enjoying the linear acidity from the cold snow, we sipped slowly and enjoyed the changes in flavor as the temperature changed.... I had somewhat of a negative impression of Jun Dai's Aragashiri and Blame, but was put in a positive mood when the shopkeeper told me that Aragashiri is the first pressing 🥰.

Junmai Daiginjo A collaboration between Yamawa Sake Brewery and Shinzawa Brewery. This year, it was the turn of the Shinzawa Brewery. From the faint pineapple aroma and acidity, it has a gentle sweetness and a beautiful lingering taste that disappears in a flash 🫥. It can be drunk on its own as well, not to mention as a mealtime sake that doesn't interfere with meals. I have the impression that it strikes people who prefer Jungin to Hakurakusei's Tokujun. ⭐️⭐️⭐️+⭐️ Purchased at the sake shop Yamada. I personally liked the gradation of this year's label design, as it seemed more upscale than ever.

I heard that this is the last year for this sake, and I wonder if the Sakahomare or Kutouryuu Doroguchi, which were displayed together, will be its successor. ⭐️⭐️⭐️ Purchased at Yamashiroya. The nose is sweet and acidic with hints of strawberry and pear. When you drink it, it is fruity from the gasiness, and the aftertaste is grapefruit-like with sourness and bitterness. The color of the bottle is also a reason why I did not notice it until the end, but it is lightly nigori (lightly cloudy). The flavor deteriorates quite quickly due to the fact that it is a draft sake, and I felt a strong sense of freshness immediately after opening the bottle, making it the most enjoyable. ⭐️⭐️⭐️ Purchased at a department store. It's sweet and sour, juicy and gassy, and at 14% alcohol, it seems to be right on trend. However, I preferred Kawatsuru Olive and Ko no Tsukasa Madoromi among the recent ones.

Aroma and taste are a mix of citrus and koji. The strong acidity is similar to sake brewed with white koji with added lactic acid bacteria nuances. The strong acidity, koji-derived sweetness, and umami flavor gave the impression of being closer to edible vinegar than to white wine. A change of pace? A challenging line? Then, I think I prefer Kai-fu-do. I'm not sure if this type of sake is suitable for different meals and occasions, but I can't fully appreciate its appeal yet. ⭐️+⭐️ Bought it at Fresta with 3 discount.
