Found by Prof. Kodama of Tottori University,
Professor Kodama of Tottori University found and used Lacancea yeast isolated from the leaves of Quercus crispula.
This yeast is a special yeast that produces lactic acid, and its refreshing acidity is perfect for summer.
Kiddo KID Junmai Ginjo Natsu no Gale
A summer-only sake from Kido, named to bring a refreshing breeze to the dreary, humid summer.
Its light, sharp acidity and umami are perfect for summer!
Otters Junmai Junmai Daiginjo Polished to 20% Sanbu
Because it is polished to the limit of 20% to 30%, it has a gorgeous aroma, a refreshing sweetness in the mouth, and a lingering aftertaste that lasts for a long time.
It goes well with king crab and salmon roe.
A friend of mine, who married into the Igarashi Sake Brewery in Hanno, Saitama Prefecture, sent me a bottle of sake.
The brewery has been in business for 126 years and won an IWC medal and an honorable mention at the 2016 Omachi Summit.
It has won numerous awards, including the highest gold medal in the Premium Heated Sake category at the National Heated Sake Contest 2016 and the Nanbu Toji Homebrewing Sake Competition Excellence Award.
The sake we were sent was two types of sake: the fruity "Tenranzan Hatsushiboritate" and the aromatic but crisp "Tenranzan Junmai Shiboritate" which we enjoyed very much😋🍶.
