Memorandum for myself
Please note that the cork will fly out vigorously when opened.
After opening the bottle, put the cork in the bottle and mix the lees.
When poured into a vessel, it was a white, cloudy sake with a slight sparkle.
The gasiness is unexpectedly strong.
The aroma was a little lychee-like.
When you put it in your mouth, you can still feel the gasiness.
The sweetness is surprisingly moderate, and I could feel the umami of the rice.
The lack of sweetness also makes the wine sharp and does not leave much of a lingering aftertaste.
It seems to go well with all kinds of food.
Would I drink it again?
If I have a chance next year, by all means.
