Memorandum for myself I was able to successfully purchase this year. I was careful to open the bottle, but I tend to be careless with the open-hole stopper type. The bottle opened without any problem. When I stirred the lees, I felt a strong shrieking sensation. When poured into a glass, the cloudy white liquor fizzes. Yes, yes, this is it! When you put it in your mouth, the fizz stimulates your mouth while the exquisite acidity, a specialty of this brewery, arrives. Of course, you can also taste the sweetness, but this year I felt a little more bitterness. Oh, it is delicious.

Memorandum for myself Annual trip to Niigata This time, unlike usual, I went to Murakami City. Murakami is a city of salmon, and during the time I visited, I was able to see a lot of salted salmon hanging in the streets. This sake is sold exclusively in the Murakami area by Miyao Shuzo, famous for its sake called "Shimeharizuru. We were able to purchase it at the brewery. Incidentally, the brewery was open to visitors. When we opened the cork, we could smell the good aroma of koji and a slight alkaloise odor. When you take a sip, a slightly sweet and savory taste like tortoiseshell candy spreads in your mouth. The aftertaste is sharp. The alcohol content is 19%, which is quite strong, but I couldn't help but drink it. It's also very wallet-friendly, and if it were available in Osaka, I would definitely buy it...

I had heard rumors that Hishiko was an unusual Niigata sake and was very interested in it, but there was no liquor store near me that carried it, so I was glad to be able to purchase it. Opening the bottle went smoothly. When I poured it into the glass, it was slightly cloudy with a slight effervescence. I was surprised when I sipped it! It tasted like coconut! It was a taste I had not imagined at all, so I was quite surprised. It was quite a peculiar taste.

Memorandum for myself Although not shown in the photo, there is a red tag hanging on the bottle to warn against opening the bottle. It is not a screw cap, but a crown type. I chilled it in the refrigerator and tried to open the bottle slowly, but I could see bubbles and the lees at the bottom started to move slightly. Oh, he's a bad guy... It took about 5 minutes to open the bottle. After mixing the lees and pouring it into a glass, it was just a splash! The aroma is sweet with a hint of koji. When you take a sip, it is just like a makwari without the sweetness. The bitterness comes later. How about a repeat? I would not dare to because of the nigori festival during this season.

When you put it in your mouth, it is fruity! But this is only the first sip. From the second sip, the bitterness comes forward. That said, it doesn't interfere with the meal. It tastes sweet and delicious in the mouth. However, I couldn't feel the fruitiness that many people have mentioned. The sweetness is so strong that it is a little boring. Memorandum for myself This is a trophy from my trip to Akita Prefecture last month. I bought it at "Maruhiko Sake Shop" in Kawatan. The owner was very kind to me and I learned a lot. I was told that this sake is not sold outside of the prefecture, so I decided to purchase it. Opening the bottle was fine and the aroma was subdued. When I poured it into a vessel, I found it to be clear and colorless, with a very fine fizz. In the mouth, there is a sharp bitterness and a creamy, mysterious taste due to the micro-firing. It might be a little addictive... I would like to repeat it... But I have to go to Akita...

I felt a slight sourness, but it did not come out at all, but only peeked out a little after the umami. It is a very well-balanced sake. I wanted to drink it carefully at home, so I bought the same bottle at a liquor store.

Memorandum for myself I bought So-no-Kangiku without hesitation because it is delicious no matter which one I choose. Be careful when opening the bottle. The bottle will blow out before you open it. The aroma is almost imperceptible. When you take a sip, you can feel the umami in the sweetness. The sweetness is elegant and calm, not fruity and gutsy. Is it because it is fire-roasted? Memorandum for myself The vivid colors of the jackets are stunning. The aroma is tropical and fruity. When poured into a glass, it has a slight yellowish tinge. In the mouth, the juicy sweetness and umami, full of fruitiness, fill the mouth just as the aroma suggests. After fully enjoying the umami, the bitterness comes and finishes nicely. Kudokidoki Ute is my favorite no matter what I drink. Do you want a repeat? By all means!

Memorandum for myself I purchased a bottle last year and was very impressed, so this season I am purchasing a bottle. Opening the bottle was surprisingly smooth, not as smooth as last year. After mixing the lees, I poured it into a glass. The aroma is of rum. When you take a sip, you will notice that it is not as sweet as last year. It is not as sweet as last year, and it seems to be a little drier. However, for me, this is just right. It is perfect for this time of year. In my mind, "Hirotogawa" is the must-have nigori in winter and this is the must-have in summer. Will you drink it again? I can't start summer without drinking this, so please come back next year!

Memorandum for myself When poured into a vessel, it was almost colorless and silky. The aroma was of fresh pear. When you put it in your mouth, you feel sweetness, but it is not a fruity, impactful sweetness, but a very gentle sweetness. It is very easy to drink.
