Memorandum for myself
Once a year, I travel to Niigata.
It has become an annual event to drink and eat on an overcrowded schedule of two days and one night at this time of the year.
We had this at an izakaya (Japanese style bar) that we visited for dinner.
The izakaya had a fairly large selection of local sake from Niigata Prefecture, and although I was very worried, I decided on this one, which I knew the name of but could not find locally.
We poured a glass full of this sake.
The color was clear.
It was a little sweet in the mouth.
It is not the fruity flavor that is popular, but the sweetness of the rice.
It has a strong umami flavor and is clean and crisp.
Is it a "light and delicious" sake?
Ah, it is like a Niigata sake.
