Memorandum for myself I have been missing the time to buy this one every year. I finally had a chance to buy it. I was afraid to open the bottle because I was told that the secondary fermentation in the bottle was in progress, but it was not a disaster, probably due to the perforated stopper. When we poured it into a vessel, it showed its true value: bubbles, bubbles, bubbles, bubbles, bubbles, bubbles, bubbles. When I took my eyes off the bottle, it was about to overflow. The taste is not so sweet, but bitter. The mouth feel is "fuka fuka". I had heard rumors about it, but it is amazing.

Memorandum for myself Happy New Year! I had decided to definitely start the New Year with this one. Nilgame was purchased in Osaka, so the purchase went smoothly. I wondered if it would go well with food since it is a noble sake. I wondered if it would go well with food, but that was no problem at all for Shinmasa ๐Ÿ˜Š. The color is yellowish. The mouthfeel is sweet and sour with the sourness coming first. It was kind of like a clear mixed juice. We purchased a set of turtle bowls, and these turtle bowls can hold exactly one cup of rice, so they are very convenient to use.

Memorandum for myself Earlier this month, I took my annual trip to Niigata. Here are the spoils of the trip. I've been hearing a lot about Abe-san lately. I was finally able to purchase it. The color is a little yellowish. The aroma is koji mold. In the mouth, it was slightly sweet and sour. The minerality was amazing. It was a great clear sake.

Memorandum for myself First time to visit Hiran I read that you have to be careful when opening the bottle, but I opened it without any problem. Memorandum for myself I was able to meet this year. This is the first lot. They said that they changed the method of making sake from this year. Opening the bottle was not too difficult because of the hole in the stopper. When poured into a glass, it is quite effervescent. It is quite bitter in the mouth. Memorandum for myself I drank Harukasumi in Akita last year. Last time I drank their standard sake, which was very good, so this time I chose this one made with yeast No. 6. Memorandum for myself Here are the spoils of my trip to Yamagata. This is a collaboration with 10 sake stores in Yamagata Prefecture. Therefore, the sake is only available at the sponsored sake stores in Yamagata. Opening the bottle was smooth. When poured into a vessel, it is quite golden in color. The aroma is subdued. When you put it in your mouth, it has a punch. However, the sweetness of the rice could also be felt. It was crisp with little aftertaste.

Memorandum for myself It was a waste of time to open the bottle and I could hardly keep it open. The bottle is fermenting in the bottle, so be careful when opening it. It took quite a long time, but the bottle was opened without incident. When we poured it into the glass, it was the first one ever! The aroma is slightly woody. Memorandum for myself Spoils of war from my visit to Iwate Prefecture in May. This is the first brand I have not seen at my favorite liquor store. The bottle is smooth and slightly yellow when poured into a bowl. One sip and you can taste the ripe strawberries ๐Ÿ“. It's so easy to drink and delicious! A jackpot!
