Choyo Fukumusume's Yumachi, limited edition, directly pumped. The richness characteristic of Omachi is modest, but the umami is firm and crisp. Personally, I prefer to let it sit for a little longer than when it is freshly opened, as it mellows out and can be drunk smoothly. Well-balanced, this sake is easy to pair with a variety of meals.

Sake made from Sasanishiki rice and brewed in four stages using alternating black and yellow malted rice. Shirasugi Brewery has a lot of really interesting sake brewing, and I look forward to it every time. The impact of the honey lemon-like sweetness and acidity is tremendous and extremely delicious. It is also great with teriyaki chicken or steak. It has a powerful flavor that will not lose to teriyaki chicken or steak.

Shirasugi Shuzo's sake is brewed only with edible rice. Sasanishiki produced in Tango is used. Sasanishiki is said to have been used for a long time as rice for sushi restaurants because it tastes good even when cold. "We want to make the best food sake that complements the food just like the sushi rice. Kinshari, created with this concept in mind, has a gorgeous aroma typical of Junmai Daiginjo, but with just the right amount of sweetness and acidity, and it finishes with a slight lingering aftertaste. I drank it with sashimi, and it went beautifully with it. A well-balanced sake. Delicious!

UTAGE Limited Nigori Kamo Kanehide Kojoshu Omachi This is the most delicious kijoshu we received from a customer. The sweetness is well balanced with just the right amount of acidity to keep it from being too sweet. It is rare to find a nigori kijoshu made with Omachi, but it is beyond imagination. It can be enjoyed on its own or with desserts.

Nishi Shuzo Corporation, which makes shochu "Tomino Hozan" and "Tenshi no Temptation", is a sake brewer. The "Tenpyo Junmai Ginjo" we drank this time is said to be a food sake, and it is certainly one that stands out more with food than on its own. Personally, I would have preferred a little more sweetness, but it is sweet for a food sake. I am curious about the sake rice used, but I think it is probably Yamadanishiki.

Jikin Special Junmai Namae Kake rice : Gohyakumangoku Koji Rice type : Yamadanishiki The balance of sweetness, acidity, and a hint of astringency is exquisite. As expected of Jikin. It has a lingering aftertaste, but is still sharp. It is recommended as a stand-alone sake or as a mid-meal drink. It has a strong flavor, so it is easier to match with dishes with a stronger flavor.

Sundo Yamadanishiki Nama Sake Fresh pear-like fruitiness with a refreshing effervescence. This sake has a high degree of perfection, with excellent sharpness and almost no cloying taste. I have been wanting to drink it for a long time, so a college student gave it to me, and to put it mildly, it is the best.

Sake that can be enjoyed cold or hot. It is a delicious cold sake to be served with sashimi, while lukewarm or hot sake is great with oden, simmered dishes, and other dishes. When chilled, it has a moderate acidity and the aroma and flavor of the rice stand out, but as it warms up, the acidity becomes stronger and the flavor becomes more like a heated sake. It has no sweetness, so we recommend drinking it as a mealtime sake rather than as a stand-alone sake.

Basically, I don't like Yamahai or heated sake, but Snow Kayasha's Yamahai Junmai has none of the harshness of either, and is so good that I want to keep it on hand at home in the winter. I recommend heating it up rather than serving it cold. It also goes well with dried mackerel. This is a sake for warming recommended by those who dislike warming up.

Gorgeous aroma and sweet and sour flavors come rushing in with the attack. It has a well-balanced taste with freshness typical of ogara-mi and sharaku. It is better to be paired with dishes (Japanese cuisine) than on its own.

Hanaizumi純米吟醸にごり酒

Hanaizumi Junmai Ginjo Activated Nigori Slightly effervescent, with a perfect balance of sweetness, acidity, and a hint of bitterness. I think it is delicious on its own or with Japanese food (meat and potatoes, etc.). It was another bottle that made me keenly aware of the high level of nigori sake this year.

Hashu Honor 50 Horizon This bottle is not like Kangiku in a good sense, maximizing the umami and sweetness of the rice rather than juiciness and flamboyance. After the elegant sweetness comes with a bang, the sweetness remains for a long time and can be savored deeply.

Sirakik Black Label "vibrant~vibrant Unlike the Junmai Daiginjo we drank last year, the sweetness is quite moderate. It has a strong muscat flavor and is easier to drink with a meal than on its own. I think I prefer it with REVOLUTION.

Kangiku's first nigori sake. It was introduced as a spin-off product of Ginkai. All of Kangiku's sake is delicious to begin with, but this year's nigori sake is outstanding.... The sweetness and umami of the rice is brought out to the maximum, and the taste is milky, which is typical of nigori sake. It is so easy to drink that a four-pack of sake is gone in a day....

Kamo Nishiki Shagafuda Sake Kohsuisen Shiboritate Sharper than usual. I remember it being a bit sweeter, but this year's seemed drier. However, the beautiful quality of the sake is as good as ever.

Gassy. Modern taste that does not match the label. The harmony between the elegant acidity and the moderate sweetness of the rice is pleasant. A highly finished sake that can be drunk quietly. Delicious.
