Uraotokoyama encountered in Hokkaido. It is a limited edition sake that is only available once a year. This is the most shockingly delicious dry sake since "Musou". It is an interesting sake that has a concentrated umami of rice, a sharpness and a long aftertaste that are contradictory. It was so delicious that I immediately bought it on Rakuten.

Tokachi Junmai Ginjo Hyosho Nigori Nama Among Kamikawa Taisetsu's sake, this bottle stands out for its sweetness. It has just the right amount of sweetness and a pleasantly long aftertaste. Not flashy, but a delicious sake to savor and drink. It can be drunk on its own as it goes down smoothly, or paired with food, and does not interfere with the dish. It is deeply delicious.

Firm dry sake. It has very little sweetness, and its ginjo aroma lingers on the nose. The sharpness is reasonable, and the lingering umami flavor is a bit long. It is the driest sake I have ever had. When heated, it tastes slightly sweeter, which I personally prefer.

One of the Akabu Limited Series. Mountain is a seasonal sake for July. This is the first time I have tasted it, and while it has the richness and weight of a summer sake, the crisp acidity from the use of white malted rice keeps you from getting tired of drinking it. It is a bottle with a perfect balance and perfection. This is one of my top favorite sake in the Limited Series.

Sake made from Sasashigure (the parent rice of Sasanishiki) produced in Miyagi Prefecture. It is not flashy, but has a core flavor and a hint of sweetness from the rice. It is a dry sake with a nice crispness and acidity at the end. It is a sake for a meal that goes well with a wide range of dishes. It can be enjoyed on its own, and is deeply delicious.

Akabu's summer sake. It has a refreshing taste typical of summer sake. Slightly gassy. Sourness, bitterness, and fruitiness like biting into a grapefruit. It tastes even better on the rocks with ice or when chilled. It is best paired with refreshing dishes such as carpaccio.

Hanamaru Akita Sake Komachi It has a dark sweet and umami taste that fits the words "rich and umakuchi". It has such a strong flavor that it can be drunk on its own, It has a very strong sweetness, but it is not clingy, so you can drink it on its own. It can be a good substitute for Jyushiyo when you cannot buy it.

Banshu Ikkyo Summer Light Nigori Slightly effervescent, sweet, acidic, crisp, and well-balanced. It has a juicy flavor that is typical of summer nama-zake. We were impressed by its high degree of perfection. A must-try this summer.

Ni-Uto Satin The sweetness and umami of this sake is made possible by the 70% rice polishing ratio. This sake is brewed with Manzai rice, a type of sake rice used only by Maruishi Brewery. You can feel the graininess of the rice and it is very drinkable. It was a rare and unusual taste that I have not had very often.

We were able to drink Sake Mirai Mimuro Cedar again this year. The moderate sweetness and too elegant taste is the same as last year. It is so delicious that it can be drunk on its own. It is still one of my personal top class tastes every year.

This sake is a collaboration of SENKYO and SAKELABO TOKYO. The sweetness is moderate, and the acidity, typical of Sengoku sake, is well pronounced. It is not flashy, but it is deeply delicious and goes well with a wide range of dishes. You can also enjoy its different faces at different temperatures, from chilled sake to chilled sake.

One of my personal top 3 tastes of summer sake. The sweetness and clear, clean taste typical of Omine, and the lightness typical of summer sake are exquisite.... The refreshing light blue bottle evokes an image of coolness, and it tastes just as one would expect. It is not boring to drink, so you can drink it as much as you like. It can be enjoyed on its own, or with dishes that are crisp and refreshing.

Sake with a strong gaseous taste that requires attention when opening the bottle. It is full of summery flavor with a strong acidity. Although it is a sake made using the traditional sake yeast, it does not have any peculiar characteristics, and is easy to drink. Personally, I would like a little more sweetness.

The rice, water, koji mold, and yeast used in the brewing process all come from Ibaraki Prefecture. The acidity is low due to the use of Ogawa yeast, which is my personal favorite. The taste is a perfect balance of light nigori-like full rice flavor, lingering sweetness, and slight bitterness. The breadth of flavor, especially from the mid-part of the bottle, is impressive and makes you want to taste it over and over again. Despite its sweetness, this sake is easy to pair with a variety of dishes, even as a mid-meal drink.

Hiroshima's famous sake "Amego no Tsuki It has a low alcohol content of 13%, yet it is still a pure sake. Since it is a raw ogara-mi sake, it has a fresh, yet delicate taste. It has just the right amount of sweetness and acidity, and the juiciness of the orikara is well balanced with the beautiful taste of sake. I found myself finishing the four-pack in no time...

The sake rice is Koshitanrei. I had avoided this sake because it claims to be a dry sake, but a sake store employee recommended it to me and when I tried it, it was too good.... It is not the dry sake you might imagine, but has a subtle sweetness, a slight sourness, and a final touch of alcohol and sharpness that is too exquisite to be typical of sake. This is a sake for a new age. A sake that claims to be dry, which will make even those who dislike dry sake groan.

I received this as a gift from a friend. The taste is clear and free of clutter, typical of Junmai Daiginjos. It has a hint of sweetness, but personally it is not enough for me, so I tried heating it up to lukewarm and it is very tasty. Cold sake goes well with sashimi, while heated sake goes great with yakitori.

The exquisite sweetness, which is not too sweet, while still having the minerality that is typical of Kangiku, makes the drink go down a treat. The 29% milling ratio of the rice is very satisfying, and the umami of Sounomai can also be felt well.

Beaumichel Cotton Candy This is a sake that even those who do not like sake should try. On the other hand, genuine sake lovers may find it wickedly good.... That is how sweet and sour and easy to drink sake is. It has a low alcohol content of 8 degrees, so it can be enjoyed on its own. We recommend drinking it as a toast or dessert sake.
