Gunma Izumi, well-known for its Yamahai (mountain hakai) style sake, only releases this unpasteurized sake at this time of the year. It is also a honjozo. The aroma is melon, and it has a lot of guts! It has a certain alcohol content, but it has a sharp taste and is quite easy to drink.
It has been a while since I opened a bottle of local sake two days in a row. It is delicious.
