Amego no Tsuki Junmai Daiginjo Black Moon Unfiltered Nama-shu Akaoni Limited Edition July 5, 2025 Sangenjaya Akaki Hiroshima sake limited to Akaki, Junmai Daiginjo made with Omachi from Akaban. This one also has a nice fruity aroma. The sweet and sourness spreads smoothly on the palate. The ginjo aroma that escapes into the nose after the sake is swallowed is superb. The juicy flavor and bitterness finish the palate. It matched well with the mizu-aubergine sashimi and we had a wonderful time.

Jyushidai Honmaru Namazume July 5, 2025 Sangenjaya Akoni Continuing from last week, we went to Akaki for the first party of the celebration. We toasted with our first Jyushiyo Honmaru. The fruity aroma and impressive sweetness. It has a thick texture with a sour aftertaste that makes you feel like you can drink as much as you want. It may be more to my liking than other Jyushidai. It was a delicious sake with an impact that one would not expect from a honjozo.

Daishinshu Kensen Junmai Bespoke Nama Sake June 21, 2025 Kagataya Sake Shop 2794 yen This is a standard junmai made from 70% polished Kinmon-Nishiki. This is Kagataya Sake Shop's special order Nama-shu. I also detected a rubbery aroma when cold, but as the temperature dropped, it had a nice aroma of green apples and Vine ripe fruit. As the name "dry" suggests, the sweetness is moderate and the taste is bitter and sharp. However, it is not too thin and is very drinkable. As the temperature rises, it has more flavor, both good and bad, so it is best to drink it chilled.

Hiran Nikomaru Hinairi June 21, 2025 3300 yen Kagataya Sake Shop A standard sake brewed with Nagasaki's edible rice, Nikomaru. We had a good impression of it at the tasting, so we took the time to taste it at home. The aroma has lactic acidity like yogurt and citrus acidity, with a hint of oak flavor. The taste is also ahead of the acidity, and sweetness can be felt slowly. It has a robust drinking experience, with a full-bodied, slightly bitter aftertaste.

Chokaizan Junmai Daiginjo Akaoni Special Nigori Nama Sake June 25, 2025 Sangenjaya Akaoni A special order product that you can feel the carbonation right after opening the mouth. It has a rice flavor and a shrieking carbonation. The nigori taste is refreshing, and the acidity tightens up the flavor. This was also a delicious sake.

Jyushidai Junmai Daiginjo Extra Namazume June 25, 2025 Sangenjaya Red Devil An extra of a higher grade than the first cup. Sweet and sour aroma, calm and elegant sweetness with a bitter finish. I preferred the taste of the extravagant drinking of Jyushidai, unfiltered.

Jyushiyo Junmai Ginjo Selected Unfiltered Nama-Zume June 25, 2025 Sangenjaya Akaoni Light and ginjo aroma with a sweetness typical of Jyushidai. Slight carbonation, followed by a lingering sweet and sour taste. The label describes it as dry and light, but it is juicy and delicious enough to drink as much as you want. After all, Jyushidai is delicious!

Kido Tokubetsu Junmai Omachi November 30, 2024 Kagataya Sake Shop 2860 yen Nice sweet and sour aroma with a hint of grapes. The special-order raw sake I tasted in the hanpukai (a special order) had a lively tropical fruitiness, but this hi-iru sake has a juicy mouthfeel as well. It is full-bodied, sweet and sour, but at the same time sharp and delicious. When heated up, the acidity rises and the flavor expands. It has the same sharpness as cold sake, and the sake goes down well.

Ding Limited Edition Nigori Sake April 5, 2025 Asahiya Sake Shop 2330 yen A blend of nigori from Daiginjyo to Honjozo, Nagano Prefecture's Ding. Purchased to try as it is reasonably priced. It is not fruity, but has an aroma of sweet sake with a hint of koji, a light nigori, and a tart but robust body. When heated, the rice aroma and acidity stand out and become more to my liking.

Igarashi Junmai Unfiltered Nama-shu Direct Kumi April 27, 2025 Uemo Shoten 2970 yen Fruity aroma like banana and apple with slight dried fruit and oak aroma. The color is pale and cloudy. The carbonation is lighter than expected, and in the mouth it has a sweetness like plum wine and a crisp acidity. The impact of the carbonation is light, but the rich sweet and sour taste is to my liking. I was satisfied with the purchase of two types of sake from Saitama Prefecture at Uemoten, which I had longed for.

Nakataya Orange Junmai Ginjyo Usu Nigori Nama Sake April 27, 2025 Uemoto Shoten 3410 yen I wanted to visit Uemo Shoten. Purchased the store's special order Nakadaya Usu-Nigori that was recommended to me. Sato Sake Brewery brews Koshu Umebayashi in Saitama Prefecture. The new Nakadaya brand was launched by Mariko Sato, the first female toji (master brewer) in the prefecture. The label does not say, but a quick search reveals that it is a junmai ginjo made from 60 polished rice from the sake Musashi brewery. This is a troubling story. No nigori-ness? The color of the sake is clear. Aroma of mellow fruits like apple, pineapple, and dried figs. In addition to the koji aroma, the taste was a little peculiar. Voluminous sweetness, well handled, and a slight richness lingers in the aftertaste.

Akabu, another note, caught in the middle of a six-pack May 4, 2025 Kagataya Sake Shop 3350 yen A gem that until now could only be tasted in the hanpukai; I was able to buy it for the first time in three years, and I'm glad it's still around 🎵. Mild opening but slight carbonation on the palate. The fruity aroma is sweet and sour with a full-bodied flavor and a slightly bitter aftertaste. Long lingering finish. The middle bottle, which was ordered separately, is elegant and moist with a delicious flavor. This sake is delicious.

Aozora Junmai Namaishu Oragami Miyamanishiki April 12, 2025 Kagoya Shimotakaido 3960 yen We had a good impression of Aozora when we drank it in Osaka the year before last. There are only a few liquor stores in Tokyo that carry this sake. I was worried about it last week and did not buy it, but I was glad to see it was still on sale. I bought it right away. The sweetness was impressive in Osaka, but this one was dry and carbonated. The sweet and sour taste spreads, and although there is some sweetness, it is delicious with a sour and bitter grapefruit-like aftertaste.

Takeyu Junmai Ginjo Kurobelle Yamadanishiki Nama Nama Nigihara Sake April 5, 2025 Asahiya Sake Brewery 3300 yen Fruity aroma of green grapes, bubbles in the glass. Lightly carbonated mouthfeel. Light sweetness with a hint of sourness. The taste is soft but dry. The well-balanced, refreshing mouthfeel will keep you drinking.

Yuho Reconstruction Assistance Sake "Yuho no Hate?" July 1, 2024 Kagataya Sake Shop Hanpukai 3410 yen Aged junmai and honjozo sake blended by special order that endured the Noto Peninsula earthquake. It has a brownish color like soba-tsuyu (buckwheat paste), but it has a sweet caramel-like aroma without the unpleasant aged aroma. When heated, the aroma becomes more pronounced, but the mouthfeel is soft. The sweetness and acidity spread quickly, and it finishes crisp and clean.

Kangiku Junmai Daiginjo Unfiltered Nama-shu Sunny Day-Special Yell March 8, 2025 Isego Honten 3850 yen A bottle brewed with "Yamadanishiki and Akaban Omachi". It is a bottle to support all those who are starting a new journey, starting a new year, or starting a new chapter in their lives. The label is decorated with a motif of wings and the sun with a wish to encourage everyone's back. The fruity aroma is reminiscent of apple honey and strawberries. Slight carbonation and acidity, soft and mellow sweetness. The sweetness lingers in the aftertaste. Compared to Aizan, the impression is similar, but Aizan has a more lingering sweet and sour taste. Both are very good sake.

Eiko-Fuji Junmai Unfiltered Nama-Shu, Akebono-Yuki March 8, 2025 Isego Honten 2750 yen This ogara-mi sake is made from local food rice "Haenuki". The opening was gentle, but the carbonation was lively enough to make the pour soar. Fruity aroma with a hint of apple. The negative sake level made me imagine it would have a sweet taste, but it had not only sweetness, but also carbonation, grape-like acidity, and a bitter aftertaste that kept the sake flowing. The flavor and richness of ori (rice powder) is also to my liking. It is also very cosy, and I thought about buying it again, but it was sold out. We enjoyed it while looking at the hina dolls still on display according to the lunar calendar.

Ooganbun Junmai Genmai Sake Tank Pressing March 15, 2025 Bajo Sake Brewery in Kumano-cho, Hiroshima Prefecture, named after the "Great Decree of Restoration of the Monarchy". I saw it on the shelves of a major supermarket in Hiroshima, but my favorite liquor store did not carry it and I ended up not drinking it. The brewery has made a fresh start since 2021 with the appointment of a new chief brewer, Kazuya Murakami, who trained at the Taketsuru Sake Brewery and Yamatoya Sake Brewery. I met him in Tokyo and had the first taste of the new sake. The aroma is moderate, and the taste is centered on acidity, with the soft sweetness of Hiroshima sake spreading through.

Kangiku Junmai Daiginjo Unfiltered Nama-shu Aizan RedDiamond February 15, 2025 Isego Honten 3850 yen A gorgeous, rich, sweet and sour aroma spreads in the glass. In the mouth, carbonation and fruity sweetness spread freshly. The sweetness is preceded by a soft acidity and bitterness, and as it is swallowed down, a sense of fruitiness passes through the nose. The richness of the aftertaste is good, which may be a characteristic of Aizan. When chilled, the carbonation increases the dryness. It may be a characteristic of Aizan, or it may be similar to the Aizan sakes that have given a good impression on the palate.
