GANGI ORIGARAMI Junmai Unfiltered Nama-shu ORIGARAMI October 19, 2025 Asahiya Sake Shop 3,410 yen GANGI ORIGARAMI is a raw sake that has been bottled and aged in ice temperature. It has a ripe fruit aroma and a soft, moist mouthfeel thanks to its fresh aging. It has a grape-like acidity, ripe flavor and fullness of flavor, and a lingering finish that is firm but crisp. It is also delicious heated. I was reminded once again that this is a delicious sake, and looking back, it had been five years since I last tasted it.

SENKOKU Akatombo Junmai Unfiltered Unrefined Genshu October 18, 2025 Sentori has disappeared from the lineup of home-drinkers since its one-sho bottles are now exclusively for restaurants. I saw Akatombo and ordered it. It had an impressive acidity reminiscent of the old Sengoku.

Tomikucho Tomikucho for glasses only October 12, 2025 The label on the back of the bottle shows that it was brewed in cooperation with seven breweries, including Hiroshima Fukucho, on the 10th anniversary of the project. It has a mild fruity aroma with a banana-like flavor. Enjoy it with mussel sashimi.

Nabeshima Junmai Ginjyo Kitashizuku September 30, 2025 Koyama Shoten 3200 yen This is the first Nabeshima in a while. I bought a junmai ginjyo brewed with kitashizuku rice, which I had a good impression of before. Mild and nice aroma like melon. Bubbles appear on the chirori. Dry mouthfeel with more alcohol than sweetness and acidity. The sweetness spreads slowly with the stimulation of carbonation, but it is cut off dryly. The aftertaste is bitter and full-bodied. The clean finish and the length of the aftertaste are impressive. The contrast with Tamitsu, which was bought together, is interesting. As time passed, the sake opened up and changed to a sweet and sour taste spreading on the palate. It was delicious even when the temperature was raised.

Tamitsu Betsuatsurai Junmai Ginjo Oorigarami Nama September 30, 2025 Koyama Shoten 3300 yen After a long absence, we went to Koyama Shoten. As I was happily browsing around the store, I noticed an unfamiliar font of TAMITSU. This is a Tamitsu from Mie Prefecture that I encountered at Yotsugi Sugiura Sake Shop a long time ago. This one is Koyama Shoten's special order, with a little bit of the oli (rice gels) submerged in the glass. Small air bubbles arrive in the glass, but I don't feel any carbonation. It has a nice aroma of apples and pears, and a soft sweetness that I like. The bitter aftertaste finishes off the palate, making the next sip more enjoyable. A delicious sake that can be drunk on its own.

Chokaizan Bespoke Hiyoroshi Junmai Unfiltered Unrefined Genshu September 6, 2025 Kagataya Sake Shop 3080 yen The aroma is not so strong, but it has a tropical fruit aroma, minus the slight alcohol and rubbery aroma. It has a carbonation on the palate, and the taste is robust and calm, with umami and bitterness. The mouthfeel is hiyaoroshi. Other than the aroma, there are no negative impressions in the taste or lingering aftertaste. It has a full-bodied mouthfeel, but also goes well with tsumami. When heated, it has a raisin-like aroma and a soft sweetness that spreads with a crisp finish.

Koeikiku Tsukikage Junmai Unfiltered Nama Sake September 13, 2025 Kagoya Shimotakaido 3740 yen This unfiltered unpasteurized sake is brewed with natural lactic acid bacteria using Jinriki rice. It seems to be bottled and stored in ice temperature for 3 months to bring out the full flavor. The ginjo aroma is like melon or lychee, a nice aroma that you want to keep smelling. The palate has a hint of carbonation, melon, and sports drink-like sweetness. The sweetness is followed by a gradual spread of sweet and sourness. A light bitterness finishes with a refreshing aftertaste. It is light for an unfiltered unpasteurized sake, so it is easy to drink.

Ohmine Junmai Daiginjo Hi-iri Yamadanishiki September 6, 2025 Kagataya Sake Shop 3300 yen Purchased Ohmine, a regular hi-iru sake that I like. Fruity aroma with hints of grapes and melon, sweetness spreads slowly on the carbonated palate. Full-bodied, with a lingering finish. The taste is not particularly sour, but it is well-balanced, with a bitter aftertaste. The sweetness leaves a lasting impression.

Hououmida Junmai Daiginjo Asahi Rice 40% Polished Araoshi Merger Hon Nama Sake August 15, 2025 Asahiya Sake Shop 3,520 yen Hououmida ARAOSHI merger sake, which we buy immediately every time we find it. A limited edition Junmai Daiginjo brewed with the best Asahi rice of the new brewing year. It has a gorgeous fruity aroma with hints of grapes and peaches, and the first thing you notice is the acidity on your tongue, with a sweet and sour taste spreading throughout your mouth. The good aroma passes through to the nose. It is a very drinkable sake with a full-bodied flavor that lingers in the aftertaste. The taste is satisfying and typical of Hououmida.

Aizu Miyazumi Junmai Ginjo Fukunoka July 26, 2025 Kagoya Shimotakaido 3718 yen Five years ago, I had a very good impression of 寫楽 brewed with the same Fukunoka rice, and I remembered that I liked other brands brewed with Fukunoka rice as well. This time, I found Aizu Miyazumi brewed with this rice and bought it. The aroma was richer than I expected, with a sweet, candy-like aroma. On the palate, the soft sweetness and acidity spread rhythmically, and the sourness and bitterness tighten up. The ginjo aroma that passes through the nose is also good. Slight sweetness and richness linger in the aftertaste. This is my favorite flavor, and it is delicious.

Eiko Fuji Shooting Star July 19, 2025 Kagoya Shimotakaido 2970 yen Gorgeous good aroma with grapes, rice and candy. Bubbles in the chirori. Sour mouthfeel with carbonation and impact. As you drink down, the rich sweetness reminds you of dried fruit, and the sourness and carbonated bitterness spread. Eikoufuji's summer sake, with an impactful taste. We liked the Akono-Yoshiki we had last time, but the summer sake made from the same rice, Haenuki rice, is also delicious and to our liking.

Kouei Chrysanthemum Sunburst July 19, 2025 Kagoya Shimotakaido 3492 yen Light aroma with a hint of grapes, and as the name suggests, a nice aroma of sunny sweetness and sourness. Air bubbles arrived on the chirori, but did not feel stimulating to the palate. After the soft sweetness on the palate, the acidity spreads on the tongue. The taste is like grapefruit. Best to drink chilled like in summer.

Amego no Tsuki Junmai Daiginjo Black Moon Unfiltered Nama-shu Akaoni Limited Edition July 5, 2025 Sangenjaya Akaki Hiroshima sake limited to Akaki, Junmai Daiginjo made with Omachi from Akaban. This one also has a nice fruity aroma. The sweet and sourness spreads smoothly on the palate. The ginjo aroma that escapes into the nose after the sake is swallowed is superb. The juicy flavor and bitterness finish the palate. It matched well with the mizu-aubergine sashimi and we had a wonderful time.

Jyushidai Honmaru Namazume July 5, 2025 Sangenjaya Akoni Continuing from last week, we went to Akaki for the first party of the celebration. We toasted with our first Jyushiyo Honmaru. The fruity aroma and impressive sweetness. It has a thick texture with a sour aftertaste that makes you feel like you can drink as much as you want. It may be more to my liking than other Jyushidai. It was a delicious sake with an impact that one would not expect from a honjozo.

Daishinshu Kensen Junmai Bespoke Nama Sake June 21, 2025 Kagataya Sake Shop 2794 yen This is a standard junmai made from 70% polished Kinmon-Nishiki. This is Kagataya Sake Shop's special order Nama-shu. I also detected a rubbery aroma when cold, but as the temperature dropped, it had a nice aroma of green apples and Vine ripe fruit. As the name "dry" suggests, the sweetness is moderate and the taste is bitter and sharp. However, it is not too thin and is very drinkable. As the temperature rises, it has more flavor, both good and bad, so it is best to drink it chilled.

Hiran Nikomaru Hinairi June 21, 2025 3300 yen Kagataya Sake Shop A standard sake brewed with Nagasaki's edible rice, Nikomaru. We had a good impression of it at the tasting, so we took the time to taste it at home. The aroma has lactic acidity like yogurt and citrus acidity, with a hint of oak flavor. The taste is also ahead of the acidity, and sweetness can be felt slowly. It has a robust drinking experience, with a full-bodied, slightly bitter aftertaste.

Jyushiyo Junmai Ginjo Selected Unfiltered Nama-Zume June 25, 2025 Sangenjaya Akaoni Light and ginjo aroma with a sweetness typical of Jyushidai. Slight carbonation, followed by a lingering sweet and sour taste. The label describes it as dry and light, but it is juicy and delicious enough to drink as much as you want. After all, Jyushidai is delicious!
