Since our town Iida was introduced on TV as a town of yakiniku (grilled meat), here is a bottle that goes well with yakiniku! Yakiniku soy sauce and plenty of wasabi (Japanese horseradish) on the ribs. The wasabi softens the delicious fat, and the flavor fills your mouth as you gulp it down. It is endless.

My First Kaku-uchi Experience The sake was selected in a stylish setting. I was attracted by the cute elephant's etiquette, and when I took a sip, I found it to be a very rich and flavorful elephant. It is a perfect place to enjoy sake in a relaxed atmosphere.

A newly started month is over and the holidays are upon us. With so many things I didn't understand, I ran through the month without drinking my favorite sake. I reached out for a bottle of sake from a new brewery at a familiar liquor store. It was tasty, clean, and pure and innocent. It made me think that this is what it means to be new. It was the kind of sake that I expect to have many flavors added to it in the future.

It's called "Betsuban" (extra), or as the owner of the liquor store puts it, "Betsu-ban" (extra)! Even if you don't want to be a part of the drama that got you hooked last year, I'm sure everyone will want to pick up a bottle of this. It has no cloying taste. The fresh aroma is mellow and not too assertive. It is a sake that you want to drink with care and pay homage to the brewers who do such meticulous work in places you cannot see. The abalone liver we were served had just the right amount of bitterness and saltiness.
