A newly started month is over and the holidays are upon us. With so many things I didn't understand, I ran through the month without drinking my favorite sake. I reached out for a bottle of sake from a new brewery at a familiar liquor store. It was tasty, clean, and pure and innocent. It made me think that this is what it means to be new. It was the kind of sake that I expect to have many flavors added to it in the future.

It's called "Betsuban" (extra), or as the owner of the liquor store puts it, "Betsu-ban" (extra)! Even if you don't want to be a part of the drama that got you hooked last year, I'm sure everyone will want to pick up a bottle of this. It has no cloying taste. The fresh aroma is mellow and not too assertive. It is a sake that you want to drink with care and pay homage to the brewers who do such meticulous work in places you cannot see. The abalone liver we were served had just the right amount of bitterness and saltiness.

I like the coloring of this etiket. It goes well with any food without any peculiarities. A bottle received from my father. The sake rice is Aizan, and I am so happy to receive a gift with love even at my age. I'll have to prepare a nice souvenir for my trip home.

I received this as a birthday gift from a junior colleague at work. I was so happy I had a big reaction to it. It is a delicious sake, perfect for a mealtime drink. I will drink it with care. It is the first time for me to receive a birthday gift from a junior colleague, and I am glad that I have worked hard for it!

It was like being complimented by a golden eticket, and I bought it immediately on the recommendation of the liquor store owner. It is fruity and easy to drink. It also has a good umami flavor. The water, sake rice, and yeast from Nagano City, which I have always remembered, have given me energy for the last spurt of this year! Thanks for your hard work!

I am always grateful for brands from the same brewery. Today's hiyaoroshi was brewed during the "big cold" season, and after the summer, the corners have been completely removed and it has become rounded, making it very easy to drink. I found a good sake to celebrate the completion of a big job. With half a year to go, October is the month I want to mature myself.

Chilled well, it goes well with meat-based meals to give you stamina in the lingering summer heat of September. The sweetness and cleanness of this sake gently relieves the fat of the meat. We are looking forward to comparing it with Kame no Umi and Yuyake Koyake (evening glow).

A bottle overflowing with respect for the master brewer! I, too, am grateful to be able to enjoy such delicious sake. A pop-up note from the owner of the liquor store said that the sake was so good that you could drink it like juice, saying, "I want to drink it all up with a straw. I had it with a glass of cold soup to start off the summer. It has a sweet aroma like melon, but not too sweet. I like it well chilled. I am sure it will not last until the cicadas sing. It will be gone by tomorrow.
