This sake is one of Houou Mita's most refreshing. This may be because Gohyakumangoku is also used. In the mouth, the taste of rice is strong. I wanted to try Tasake's Junmai Daiginjo at least once. It was packaged in a presentation box, and the design of the bottle was quite splendid. Some junmai daiginjos have a strong ginjo aroma, but the aroma of this one is a bit more subdued. The taste is lighter and more elegant than I had expected, but it is a good sake with a strong presence.

I had lost the timing to drink it after I bought it. Finally, I decided to open the bottle for the New Year's holiday. Be careful not to spill when opening the bottle. The carbonation rises to the top. Because it contains carbon dioxide gas, it is completely shwashuwa in the mouth. It is quite strong. It tastes exactly like tazake, but the carbonation makes it refreshing, so I was able to drink it more smoothly than usual. It would be a delightful alternative to sparkling wine.

The long-awaited Hanamup, which I have been wanting to drink for a long time. Expectations were high as the sake was supervised by the president of Jyushiyo. Since it is not a ginjo-shu, the aroma is mild. When the glass is swirled, the aroma is gorgeous. The moment you put it in your mouth, a peachy, lychee-like sweetness spreads, and you do not feel the bitterness characteristic of nama-shu. As the day goes by, the sweetness increases. However, the aftertaste is crisp and not too sweet. As expected of a sake that becomes difficult to obtain, it is delicious.

The aroma is very nice even though it is a special junmai because it is an unfiltered, unpasteurized sake. I was attracted by the cute pink label and the sake rice called Gin-no-Iroha, which I had never tried before. I was told that they use a yeast that does not produce any aroma so that the sake can be enjoyed with the taste of rice, and it is true that the aroma is almost imperceptible. Hakurakusei from the same brewery is a refreshing sake, so I drank it with that image in mind, but the moment I put it in my mouth, the sweetness spread at once. However, the aftertaste is clean and refreshing, and the taste is very elegant. This is delicious. It is better to drink it as a food sake when it is not too cold, because it becomes mellow and sweet when it is cooled down a little.

Hitotsume is a sake that we continue to drink every year. This sake is made only from sake rice produced by a man named Takayuki Arai. Incidentally, the town of Shintotsukawa, where Mr. Arai grows sake rice, is said to have the largest area of sake rice in Hokkaido. This sake was born in a town where sake rice is grown. The aroma is sweet and fresh. After the juicy mouthfeel, it has a tangy flavor that is typical of ginpu, and its sharpness does not interfere with food. It seems to be getting tastier every year. We are looking forward to next year's Hitotsume.
