Senju
A ginjo-shu with an elegant and clear aroma to be enjoyed with meals. The original flavor and acidity of the rice can be felt in the crispness that passes down the throat.
A gift from Fukushima.
It is a slightly dry sake with good acidity and bitterness. The flavor is even more pronounced when heated.
The alcohol content is 15%, so be careful not to drink too much.
Unrefined Junmai Sake, once hiki-ire
In order for our customers to enjoy the original flavor and richness of junmai sake, freshly squeezed junmai sake is stored in cold storage without filtration, and then hi-ire is performed only once during bottling.
The aroma, complexity, and depth of this junmai sake are different from those of light sake. You can enjoy its rich, deep flavor and the delicious taste of rice that can only be experienced with unfiltered sake, along with strong dishes.
At yakitori restaurants.
Ozeki is usually not an option for me because of its one-cup image, but I tried it at a yakiniku (grilled meat) restaurant when they had it hot.
It was surprisingly easy to drink. Not bad at all.
