Junmai Ginjyo Aizan" by Masamune Gakki My first Aizan from my favorite Musical Instrument Masamune 🍶. It's only January.... This is so good that it makes me want to shout ✨No.1 for 2025. The soft mouthfeel of the Aizan gradually spreads to the palate with its umami sweetness and instrumental-like slight effervescence. Too good 😫👍. I've never emptied a bottle so quickly 💦.

Jikin Tokubetsu Junmai Nigori Sake Nama Since it is New Year's Day, we had a nigori sake of Jikin. Sweet and delicious. This is already a Calpis sour for adults. Juicy, full of gas, and the final umami. Jikin is delicious this year, too! I love it!

Futo Junmai Daiginjo Aizan 48 Fire A friend gave us a bottle of Ni-Utsuri as a gift for opening a new business. The taste is strange, with both heavy and light, sweet and spicy, just like the concept of Ni-Utsuri. I like both the freshness when the bottle is opened and the roundness on the third day 😫👍.

Kaze no Mori Akitsuho 657 Brought with mother at a hot spring 🍶. It has a balance of fresh gasiness, white grape-like fruitiness, and sweet and sour sharpness that is typical of Kaze no Mori. It's still very tasty. And it's cheap.

Tenmei Nakadori Ichigo Junmai Namaishu I returned to my hometown of Aizuwakamatsu, so I had to try a sake from Aizu. It is a standard sake that is truly Tenmei's mainstream, using Yamadanishiki for the koji rice and Gohyakumangoku for the kake rice. Anyway, it is sweet, tasty, fresh, lush, clean and transparent! I love it 👍

Abe Junmai Ginjo Silver Label I bought Abe-chan as a souvenir in Niigata 🍶. It has a dryness of sweetness and acidity with a hint of gas and bitterness that is typical of Abe Sake Brewery. It can be served with food or on its own. It's like Shinmasa, and it's still delicious. It is my favorite sake from Niigata.

Aizu Musume Jo Matsubara 8 Junmai Ginjo-shu "Jo" series 🍶, brewed with each rice harvested from a single rice paddy. It has the delicious flavor of Gohyakumangoku rice, elegant acidity, not too sweet and not too spicy, and excellent freshness. In fact, it is my favorite sake from my hometown Aizu. Delicious 😫. Love it 😫.

Yamadanishiki Ni-no-shiro" (Sannodo Yamadanishiki) I just finished a big job, so I had a bottle of my favorite San-do. It is simply delicious. It has just the right amount of sweetness, a moderate fruitiness and lactic acidity, the umami of Yamadanishiki, a thick mouthfeel, and a strong gaseous sensation. A model of modern sake 😫👍.

Wakanami Sparkling Second fermentation in bottle sparkling wine made from Kotobukinmoku and Fukuoka Dream Yeast No. 2. Wakanami's typical banana flavor, but not too sweet and dry, goes well with any meal. I like it.
