Okuroku Junmai Ginjo-shu Namahoshi Unite Unite was recommended by Mr. Kumagai at Lajomon. Yui no Kou x Yeast No. 6 is like the culmination of all the Okuroku we've had so far: delicious rice flavor, nose-pleasing aroma, gentle sweetness, moderate acidity, and bitterness at the end. Oh my god, it's so good. I like it.

OCEAN99 Orange Sea Arrival Unfiltered Once-Fired Unpasteurized Sake I actually don't like autumn sake that much because it is mellow but not fresh, but this one is shockingly good. It has a thick umami, tropical fruitiness, a lot of gasiness, and a rich bitterness. Too good 😫. (I can't believe this is priced at 1,595 yen, I want to drink it every day)

Murasaki-chu Junmai Ginjo Autumn Leaves Label The 13th Murasakyu's Miyamanishiki (Miyamanishiki). I was a bit surprised because the Murasakiu I've had so far has been sweet, fresh and juicy, but this one has the umami of Miyamanishiki, firm acidity, mildness, and a hint of gas. This is good 🍶.

Seikyu Soma Dori Junmai Akkatsu Nigori Uma Uma Uma We bought some delicious horse sashimi at Aizu Sakashita, so we went to nearby Gonoi Sake Brewery and had a glass of our favorite Sama nigori (nigori). It has just the right amount of sweetness, moderate acidity from the white malted rice, and a gassy feeling that is typical of Samma. It's so good, not too sweet 😫👍!

Tedorigawa Daiginjo Nama Sake Arabashiri A former boss of mine who lives in Kanazawa sent this sake to me and I opened it. Despite the crispness and appleiness of the first sip, it has a moderate sweetness, a slight bitterness, and a sharp aftertaste, making it perfect for a mealtime sake. Delicious! AZAZAMASU😊.

Aizu Miyazumi Junmai Ginjo Fukunoka Hi-iri I bought this pink label when I went back to Aizu. It is 50% polished rice of "Fukunoka", a new variety born in Fukushima. It is a moderately sweet sake with no cloying taste and can be drunk like water.

Seikyu Soma Junmai Ginjo Yamadanishiki My favorite sake from Shirakawa, which I bought when I went back to Aizu. It has a beautiful balance of sweetness and acidity without any clutter, just like a Junmai Ginjo made from Yamadanishiki. It has a juicy berry taste and a gasiness that is typical of Soma. It's so delicious 😫👍
