I didn't know Gokotsuru had been revived! The transportation company in Fukushima had revitalized it. I bought it without a second thought. I opened the bottle carefully because it said to be careful about opening the bottle. Slightly carbonated! It's thick and umami-kuchi type, my favorite!

The owner of the sake shop says, "It's hard to find sake of this level at this price (2,400 yen). In the past, there were times when we couldn't recommend the first lot (origarami), but recently it's been consistently good. It's very cosy. That's how he described it. It's as delicious as its reputation. It is going to run out soon.

My first encounter with Kyoheiji was about 15 years ago. It was a yakitori restaurant in Nishi Chofu, Tokyo. A dirty red paper lantern, a time-worn curtain, and pipe chairs inside the restaurant. The restaurant was run by a couple who were so close to each other that they quarrelled with each other (laughs). When I was drinking a Shiribari crane, the landlady said to me, "You really like sake, don't you? You should try this one if you like. I was presented with a bottle of Kyoheiji. It had an alphabetic label, which was unusual for sake at the time. I asked my wife to pour a glass of sake for me, and when I tried it, it was great! I fell in love at first sight with its fragrant and mellow flavor. Even something as strong as yakitori can never be beaten. Thinking about it now, I wondered why they had Kuheji in that restaurant. I wonder if it was the owner's favorite. I'm also surprised that they served it for 500 yen per glass, which is unthinkable in a restaurant in the city. However, the restaurant was closed a few years ago. It's very disappointing. This time I got it with my hometown tax payment (Nishiwaki City, Hyogo Prefecture). I will drink it at home while remembering that yakitori restaurant.

The only sake in the Shinsei Colors series that is brewed in a wooden barrel is "Akisakura (Cosmos)". Junmai sake made with "Improved Shinsho" from Akita Prefecture. The beautiful red-pink label is eye-catching. It has a fruity aroma and a soft, round, gentle flavor. The balance between sweetness and acidity is excellent. The bubbles on the tip of the tongue are a nice accent. It had a very elegant impression.

It is made by maturing the raw sake pressed in spring at low temperature until autumn. However, the cage dissolves and the cloudiness is negligible. The nose is reminiscent of ripe fruit and the wine is still young in the mouth. However, the taste is full of umami with a sense of volume. In other words, this is an autumnal sake with a different taste, mixing the freshness of new brew with the deliciousness of aged sake. This is a sake to enjoy on a long autumn night.

This is the chukadori version of Saku Enochi, which won first place in the 2018 SAKE COMPETITION Junmai Ginjo category. Although the year of manufacture is different, it is a delicious taste that only TOP can deliver. Sweet like a pear, it has a gorgeous and elegant aroma, with a delicate and transparent flavor on the palate. In the mouth, you can sense a delicate and clear flavor, and a crisp finish with acidity. It has a good balance of sweetness, umami and acidity, and is a very elegant sake. This is truly one of those bottles that you should be careful not to drink too much of.

You can enjoy the sweet and fruity aroma of Yamadanishiki and the mellow and elegant flavor of the rice. In addition to the fine, fine bubbles, the balance of gorgeous sweetness and acidity, and the lingering juicy goodness is as good as it gets. The brewery is located in Fujioka City, Gunma Prefecture, where there is plenty of great water to drink. Ruka was named after her own child, who was to be named after the brewer. This Ryuki was recommended to me at a nearby liquor store and I tried it for the first time, but I like it. When I looked closely at it, I found it was the original Oragarashi version of the liquor store. It has a fresh, sweet aroma like pears and muscat, and a soft, gentle flavor that is well-drawn. The natural sweetness that comes out gradually, in addition to the faint firing that is characteristic of origami, leads to a crisp and refreshing finish. The acidity that pulls the whole thing together is gorgeous and keeps you wanting to drink more. It's also very good value for money. Another fan.

It is named "Survival" in reference to the strong power of Tamanae to survive. Sweet Ginjo aroma and heavy fruitiness that spreads on the tongue. Junmai Daiginjo, full of rich flavor. The roughness from the heaviness is reminiscent of a sense of survival. It is recommended to be used with deep-flavored dishes and deep fried foods such as tempura because it is characterized by its dense flavor.

It has mellow aroma and juicy taste of rice, and the rich aftertaste is pleasant. The brewer is a relative of Kiyomasa Kato, who is said to have rebuilt Kumamoto Castle, and they are donating a portion of the proceeds from sales to support the reconstruction of the castle, which was damaged by the earthquake.
