Kudojyo-jozu
It is famous but I had never had it before, so I tried it.
When heated to about 40 degrees Celsius, the juiciness and sweetness come to the fore.
When it is heated, the sweetness and umami are lessened and the sharpness improves.
I think it's good, but I know a better one, so I guess it's not that bad.
