Yum! The moment you put it in your mouth, it's delicious. Shuwashu, rice flavor, slight sweetness, melon-like acidity, salivating umami acidity, and enough bitterness that the rice flavor is pleasant and not bothersome. There is a lingering umami.
When nigori is mixed, the assertion of each flavor becomes less pronounced and the umami and bitterness of the rice flavor increases. It goes better with vegetables than seafood.
