In Shimane Prefecture (7) Souvenirs for a friend's house
This is another sake I chose after consulting with a liquor store!
I really wanted to bring Kaze no Mori, but I felt it would not keep the temperature well. I asked him if he had any similar sakes that were fire-aged.
It is a sour, carbonated sake with a koji flavor. It said on its website that it was made with lactic acid bacteria. I was not sure what kind of category it was.
My friend said it has a low alcohol content but feels strong and tastes of koji!
I now understand a little more why the liquor store said it was similar to Kaze no Mori!
We drank 4 bottles side by side, Gassan from Shimane, Shichikanma, Nichinichi from Kyoto, and Kido from Wakayama, all different types, so it was a good time to compare 🥰.
