All Hitogochiki grown in Nagano Prefecture is used. Rice polishing ratio 55 Alcohol content 15%. This sake caught my eye at the first sake store I entered. It was a brand I had never seen before, but I was sure it would be delicious because it was a sake from Nagano! I bought it with the belief that it was a Nagano sake. So, I bought it. The shopkeeper gave me some information about the brewery, including that the master brewer is a woman. As the pink label suggests, it has a soft and fluffy sweetness and flavor. It was still delicious.

100% medium-ripened Shin-Senbon (Higashihiroshima) Rice polishing ratio 55 Alcohol content 16%. Rururu? I bought it after reading the label. The first day after opening the bottle, the alcohol taste was quite strong and a little harsh. However, on the second day, it softened and became much easier to drink, mellow and delicious. By the way, the bottle is corked with a vacu-ban, but when I lightly put the lid on the bottle after pouring it into a glass, the vacu-ban flew off. It took me about a week to finish the bottle, but the bacuban was still up 💦 by the end. (If I had used a vacu-ban, I would know what I was looking at.)

R5BY brewing No.3 100% Miyamanishiki Polishing ratio 55 Alcohol content 16%. Sake degree ±0 Acidity 1.5 I bought this sake at a liquor store where I happened to go out, thinking it was a brand I had never seen before. Slightly effervescent Peach! It's like a clean, smooth peach. The bitterness tightens it up, which is also nice. I opened half of the No. 4 bottle in no time. Another delicious sake.

Junmai Ginjo Nao Kumi Alcohol 16 degrees Celsius Polishing ratio 50%. This picture was taken with Sairai which we drank a while ago. Slightly effervescent. The balance of sweetness, acidity, umami, and a hint of bitterness is exquisite. The sharpness is also outstanding. In my opinion, it is the best Sairai I have ever tasted. It may be the best sake I have had recently.

Rice polishing ratio 50%. Alcohol content 13%. This is a brand that I have never seen in a store before and this is my first drink. It has a slight effervescence. It has a grape-like flavor and a full-bodied taste. It also has a refreshing feeling, with a slight bitterness in the aftertaste. The acidity and sweetness were in good balance, and I almost couldn't stop. For its low alcohol content, it is not too light, but is very drinkable and delicious! It may be an unlikely flavor.

Rice polishing ratio 60 Alcohol content 16%. The logo mark on the label? I was not impressed by the logo on the label 💦, so I did not buy it even if I saw it before. However, I somehow wanted to drink a sake from Hokkaido, so I bought it. It's delicious! I reflected on my preconceived notions. The sweet and mellow taste reminded me of Genmai. A few days after opening the bottle, I feel like the alcohol is getting a little stronger, but the sweetness and soft richness are delicious.

Junmai Ginjyo Nama-nazake Nakadori 100% Sake Musashi produced in Saitama Prefecture Rice polishing ratio 60 Alcohol content 15%. This is the first brand I have ever seen and I bought it as a challenge. At first, it was slightly effervescent and had a melon-like taste. Smooth on the palate. It has a fruity and astringent taste, like a wine. The alcohol content is also rather high, so you may feel it is stronger than the 15% alcohol content. It may not be to everyone's taste, but I enjoyed it. I would like to drink it again!

unfiltered (pure) ginjo 100% "Watafune" (short-stalked) sake rice produced in Ibaraki Prefecture Rice polishing ratio 55 Alcohol content 15 It is fresh and rather light on the palate, but it has a strong umami flavor and a delicate taste. I don't know what it is, but it is delicious anyway. I had another one of this Watanobune before and it was so delicious that I saw it at a sake store and immediately bought it again. It is one of those sakes that I wish more people knew how good it tastes.

Kake rice: Hachitan-Nishiki 79 Koji rice: Omachi Percentage used: 21 Polishing ratio Kake rice 60%, Koji rice 50%. Alcohol content 14 Light on the palate and easy to drink. It is fresh, like a sweet and sour juice. I drank it at room temperature, but it would be more refreshing if it were chilled. It is a delicious and easy-to-drink sake. I would recommend this sake to sake beginners.

Junmai Sake Ingredient rice: Yuyamanishiki Polishing ratio 60 Alcohol content 16%. Slightly effervescent The taste is clean, with a hint of sweetness and a slightly complex flavor that is typical of orikarami. I had previously had Higashitsuru, which had a sweet and sour taste, and I liked it so much that I got it again this time. The name "winter preparation" is also nice. It has a fizzy taste, and it might be easier to drink if it were chilled, but I think I prefer it closer to room temperature, as I can taste the sweetness and sourness. I made a mistake with the name, so I had to re-post 💦. Sorry, Azuma Tsuru 💦.
