After agonizing over junmai ginjo Yuyama or Aizan, I chose Aizan. It was juicy, sweet and delicious. Toyo Bijin + Aizan, so it had to be good. Next time, I want to try Omachi.

She said she bought it because the store owner recommended it as a rare sake. I was too happy!
It tasted like pineapple with a fruity aroma and an elegant, dense sweetness like honey. It was a beautiful sake✨.

On a camping trip to Shiso, I stopped by Sanyo Hai Sake Brewery and purchased a store limited edition sake and a boar cup.
The taste is refreshingly sweet and silky, just as the label says. It is in the modern seasonal sake lineage of Banshu Isshu Ikkyo, which I quite like.
We chibi-chibi'd it over a bonfire. 🏕️

I received this as a Saga souvenir from a neighbor.
It is 39% polished rice and has a clear yet umami taste. It has a nice sharpness and was a perfect match for the sashimi of Japanese horseradish.

Light and fresh taste as a summer sake. It has a subtle acidity. It is best served chilled as a mealtime sake.

It has the sweetness typical of Aizan, a tangy gasiness, a slight sourness, and bitterness in the aftertaste. It is a bottle filled with the good points of Kaze no Mori.

Sake brewed in wooden vats on a dare in this day and age. I had thought that the use of wooden vats was for romantic or storytelling reasons, but this one certainly has a wooden nuance! I have a feeling.
