I've been trying to improve my diet, but I'm not sure what to do now. This time I tried to drink some sake from Daishinshu Shuzo, a sake brewery in Nagano Prefecture. I'm not sure when I bought it. I don't know when I bought it... sorry, sake! The aroma is a faint ginjo scent with a hint of sake. In the mouth, it has a fruity mouthfeel, good acidity, and a slight bitterness. It has a nice crispness and is easy to drink. I'm glad that the sake I drank for the first time in a long time was a hit😌 Sake is delicious after all!

This time's sake is Junmai Ginjo "Saku Kaminoho 2020" from Shimizu Seizaburo Shoten, a sake brewery in Mie Prefecture. It is a "Suzuka Sake" made only with rice grown in Suzuka, Mie Prefecture. The aroma is a faint ginjo aroma with a hint of Japanese sake. When you hold it in your mouth, you can taste the soft acidity and sweetness of rice. After that, the juicy sweetness and umami spread in the mouth and it breaks off easily. The aftertaste might be like pear or apple🤔. It's too good to eat 🥺This is a must-have repeat purchase! I also bought a bottle of FLINT and IMPRESSION to give to a friend as a gift 🙌. I had a little bit of the FLINT, and it was a pretty good sake too. Saku is still good!

The Third Edition of the Sake Gacha From Kitano This time's sake is Junmai Daiginjo sake "Sake wo Seller Inu Sake wo Tsukuru Neko 2021" from Hozan Shuzo in Niigata Prefecture. This sake is brewed using 100% Koshihikari rice produced in Niigata Prefecture. I've been saving it since New Year's to drink at home with friends in secret, and I finally opened the bottle! The aroma is fruity ginjo and alcohol. When you put it in your mouth, it is a little thick and smooth. It has a firm sweetness of rice and a little sourness. The berry aroma spreads to the mouth and makes it gorgeous. After the aroma, the sweetness spreads further. This one is easy to drink! It's the kind of thing that goes down easy. It's perfect for those who want the fruity and sweet taste of rice! The sweetness is more moderate than Himezen, Mio and TEHAJIME, and it's light. It's not as sweet as Himenzen, Mio, or Tehajime, but it has a strong sake flavor. It's a delicious sake from a good company.

The first sake gacha from Oki! This time the sake is "TEHAJIME" from Tomikunishiki in Hyogo Prefecture. This sake is designed to be easy to drink, even for beginners and those who don't have a strong taste for sake 🙌 so the alcohol content is low at 8% alcohol. The aroma is a sweet and sour berry scent! In the mouth, it's sweet! It has a sweet and sour taste, reminiscent of berries or cherries, and a fruity taste. There is a slight bitterness in the aftertaste, so it's a bit like sake. The alcohol content is not high, so it can be drunk easily. Overall, I feel it is similar to Himezen and Mio. This time we have a sake called "Reimei" from the Okinawa brewery Taiishi Shuzo. They are the only brewery in Okinawa, the southernmost tip of Japan. This sake is a gift from a friend😌 Usually, sake is made in winter, but this brewery uses a "four seasons brewing" style to make sake throughout the year due to Okinawa's mild climate. Now, let's get to the booze. The aroma is not ginjo, but rather an amino acid aroma, like that of heated junmai sake. On the palate, it tasted sour and amino acids, somewhat like fish. Dry. The type that leaves a bitter aftertaste. My first impression was that it was a sake from a popular pub. The taste is stronger than a packaged sake like Onikiri. My friend said it tastes close to Awamori🤔 I've never tried it so I didn't know what to expect🤔 It's a very special sake from the southernmost brewery in Okinawa 👌 If you drink it with Okinawan food, maybe it will turn into a drink 😉

This time we have "Kamelei Shinshu", a pure rice sake from Okazaki Shuzo, a brewery in Nagano Prefecture! This time, we have "EAU DU DESIR", a Junmai Daiginjo by Manjo Brewery in Aichi Prefecture! EAU DU DESIRE = Water of Hope🤔 The scent is light, really faint, sweet and something that smells like an amino acid-based? But it's basically an alcoholic feeling. In the mouth, the sweetness of the rice is light and the acidity is a little stronger than that of the rice, but it flows like water. It is more acidity and umami than sweetness🤔 As the temperature rises, it becomes easier to drink. The crisp acidity and mouth feel and the fruity taste that comes out at room temperature made it easy to drink one drink after another. It's a sake that has been adopted by three star restaurants in France, so if you're interested, give it a try!

This time, we have a sake called "Dan" from Sasaiichi Shuzo, a brewery in Yamanashi Prefecture! The aroma is not of ginjo, but of alcohol. The sweetness is less pronounced when it's chilled, but as the temperature is raised, the sweetness gradually becomes more pronounced and easier to drink 👌. This sake is a Junmai Daiginjo from Kichihei Kato Store. This sake won a gold medal at the Wine Glass Drinking Sake Awards (apparently). But we didn't have any wine glasses in our house, so I'll be having a toast with my usual sake cup. The aroma has a sweet scent like a ginjo sake. It's true that if you're in a wine glass, the aroma will build up and be clearly perceived 🤔. The taste is light in the mouth at first. There's a nice acidity that's not too strong and a soft sweet taste of rice. It's not very sharp, but a gentle sweetness stretches on the tongue. A slight astringency and bitterness appear on the palate. The crispness isn't great, so it's like you want to reset it with water with every sip. Indeed, this drink seems like it would be better suited for drinking in a wine glass while enjoying the aroma🤔. By the way, you can buy this sake on Amazon (about 2000 yen per 4-gallon bottle) 👌 I think it's a great sake, reasonable for a daiginjo available on Amazon, and has a ginjo-like flavor.

This is a pure pure pure rice sake made by Miyako Bijin, a sake brewer from Awaji Island. It is made with the aim of being a low alcohol pure rice sake. It was named "Miracle Rose" after the miraculous rose, the blue rose, because it was made through trial and error. It's unprocessed, but it's 10-11% alcohol by volume. The liquid color is slightly yellow. The aroma is fruity with a fruity berry-like berry-like burgundy aroma with an odd sourness. It tastes sour, sweet and astringent, with fruit-like sweetness and aroma. There is a heavy feeling in the mouth, but it goes away quickly. This is the last time I drank this wine in Awaji Island. I found out that there is good sake on Awaji Island too 👌.

Today we have a liqueur from Nara Toyosawa Shuzo Brewery, famous for Houshuku. We will have a liqueur made of rice and malted rice. I found this liqueur at a convenience store near here, so I bought it. It has a faint aroma of rice and a faintly sweet sake. The taste is sweet. It is slightly effervescent. The alcohol content is low, so it feels like a sweet, easy to drink sake. I knew it wasn't a Japanese sake 🙌 it's a liqueur. Compared to the famous Mio, it has less sweetness and less fizzy taste.

This is Honda Store's Junmai sake. It is made with 20% Yamada Nishiki for "richness" and 80% Gohyakumangoku for "lightness". Let's start with room temperature. When the bottle is opened, there is a sweet aroma reminiscent of pineapple. It has a rich rice flavor that is unique to Junmai sake. The acidity is strong and quite dry. However, the aroma is nice, so it is not too heavy. There is a lingering aroma of sake in the mouth for a while after drinking. The aroma that goes through the nose is very alcoholic. When you drink it cold, the sweetness and aroma is reduced, and it becomes a spicy sake with rice flavor and acidity. The aftertaste also becomes light and refreshing. I prefer to drink it at room temperature. I'm sure this sake would be delicious with simmered meat and potatoes or some other things cooked in a sweet way 🙃 This product is also available on Amazon ( 2000 yen/720mL). A pure rice ginjo sake made by Sennenichi Shuzo, a sake brewery on Awaji Island. It is a rare brew that does not come out of Awaji Island. It has a sweet ginjo aroma that rises up when you pour it into the glass. It is light on the palate, with a hint of amino acid flavor spreading on the tongue, a light ginjo aroma that passes through the nose, and a gentle sweetness and slight acidity on the finish. This is a refined and refreshing sake that has the goodness of our original sake, with the amino acid flavor, the sweetness of the rice and the acidity well balanced. This one is priced a bit higher (2000 yen/720mL). This brewery has a Junmai Daiginjo sake called Jun-Junu, which is one rank higher, and I'd love to drink that too if I ever come across it!

Original sake from the Sennenichi Sake Brewery in Awaji Island I bought this sake for a tasting to see what it was like. It had a pristine taste, strong amino acid flavor, and strong alcohol content. I didn't feel the acidity as much as it should have. However, it was easy to drink despite the fact that it was an unpasteurized sake and the alcohol content was not too strong. It was easy to drink even though it was unpasteurized. It was a very good sake from Awaji Island. It was a truly delicious sake from Awaji Island.

A pure rice activated nigori sake from Miyako Bijin, a sake brewery located on Awaji Island. As the word "active" suggests, be careful about opening the bottle! Chill well, stand it up and let it stand for at least an hour, then open it slowly while it's degassed! Patiently waiting for the bubbles to settle and slowly opening the bottle! I feel like this waiting time makes the drinks taste even better, right? The taste is fresh on the palate with a gorgeous, slightly sweet rice taste. The aroma is a bit like sweet sake. Poured into a glass and waited for it to dissipate, and that's a complete change! The carbonation curd from earlier has been removed and it's now a mellow, sweet drink! Delicious! The best part of the active liquor is letting it sit for a few days to mature, but it's so delicious it's a chug. lol The taste changes as you drink it, so it was a fun and delicious bottle that I would drink again. It was reasonably priced (about 1,700 yen for a 4-grain bottle), so if you stop by on Awaji Island, be sure to check it out!
