Nori
Slightly yellow in color. Transparent. Smell is a mixture of floral sweetness and astringent woodiness.
When drunk, it is sweet, like melon or peach, with some carbonation. Shaky. The first sip was not so bitter and went off refreshingly. The second sip is a bittersweet, but the bitterness is quite strong, and that keeps the sweetness in check.
It has a fruity flavor that is typical of unfiltered, unpasteurized sake, but the acidity and bitterness are strong and delicious. It is a good sake, perhaps due to the power of Hachitan-Nishiki.
