I received this alcohol as a gift from an alumnus + a promotion gift. It is probably quite expensive. I'm glad he knows what I like when he buys Junmai. The color is an amazing yellow. The smell is like Shaoxing wine, with a sourness and an old, aged smell. When you drink it, it comes in surprisingly easily. The sourness and sweetness are well balanced. The floral aroma spreads on the palate. It tastes like a slightly bitter honey flower. It goes into the tongue without being sticky. Delicious. The alcohol content is 19%, so it gets hot from the back of the throat. I tried it on the rocks. I was told that this is the recommended way to drink it, and it is indeed lighter when chilled. However, the original rich acidity and sweetness of the sake is well-balanced, so you can drink more and more while feeling the full flavor of the sake. I recommend drinking this on the rocks. Very rare Katsucoma Shiboritate. It's a sake from Toyama, but it's not easy to drink. Beautiful and clear. The smell is fruity. When you drink it, it disappears softly on your tongue. Amazing. The sweetness is strong and the bitterness is not so strong. It's good. The acidity is also nice. It was quite expensive, but I'm glad I drank it. Personally, I think there are a lot of individual differences in Katsukoma, so if I meet someone once in a lifetime, I'd rather drink it than the other way around.

This sake is only available at Houshi, a long-established inn in Awazu Onsen. It is made by Kano Shuzo which is known as Jokigen. In the photo, the back is sweet sake. The color is quite yellow. It is transparent and beautiful. The smell is the same as Jokigen, sweet but with a bitter taste. When you drink it, it is indeed sweet, but as expected of Jokigen, it can be cut well. The bitter taste is still characteristic. At the moment of drinking, there is a sweetness that lingers on the tongue a little like a sweet sake, but after that, the bitterness is strong enough to cut through. Nakanuka delicious. However, it is expensive, so it is cheaper to buy and drink Jokigen normally. It was good to be able to drink it as a memorial because it is a Ryokan which is expensive and does not stay easily.

It is a good sake. It is a good sake brewery though it is a small brewery and I have not seen it so much in Kanazawa. I want to buy various kinds again. It is a sake brewery in Saga for some reason, but it is Wajima in Noto.
