It is sparkling and very gorgeous. The 80% rice polishing ratio gives it a punchy omachi flavor, yet it is easy to drink and pair with food. I paired it with a home-made hamburger steak. The label matches the concept and yellowish color, and it is properly delicious.

A limited edition sake brewed with Hokkaido's sake rice Comet. It has a refreshing yet firm umami flavor, a burst of freshness from the sake, and a wonderful balance of bitterness in the aftertaste. It is refined, yet retains its sake-like character.

I had to try a sake that had been aged for eight years, and it was superb. I have been drinking mainly raw Oroku, but I was impressed by the mellowness and calmness of the aged sake, as well as the flavor that can only be described as the same old Oroku.

It is a 2023BY, brewed No. 19. I tried it at room temperature and found it to be rich, dry, and deep, and it tasted like it should be heated. It was a perfect match with stir-fried minced meat, green peppers, and bamboo shoots.

It is brewed with Nara's new sake rice, Nanaro. Unlike Mimuro-Sugi, the bitterness comes first in this one.

I had a bottle of 2020BY that had been aged for 5 years, and it tasted clear and without a sense of maturity. It has a sweet, light, slightly acidic taste, and is a very elegant sake that goes well with a glass of wine. Shinmasa is still excellent as a food sake.

Strong umami. It is a matured sake, but it feels fresh because it is a nama-shu. I drank it warmed up, and the aroma of rice rose up so much that it was blissful. This is delicious!
