Tenpatsu Shibitate Namaishu Akaiwa Omachi
I forgot to take a memo, so I just took a picture.
I got the impression that the calmness of the Omachi stood out more than the showiness of the nama-shu.
Premium S
I forgot to take a note, so only a photo
The concept is to aim for the ultimate ordinary sake.
It's true that it's not flashy, but it's not tiring and you can drink it easily.
Sogapelle Efis Ilya Thornton
It's been quite a while since I've tasted Sogapelle Efis.
I had an image that it was more like a white wine, but the soft sweetness of the rice and the fresh aroma of the wine were harmonized at a high level.
There was no unpleasant sourness when I drank it, and the balance between sweetness and sourness was really good!
Oroku Special Honjozo Nagare (2016)
After feeling the sweetness of the rice fluffily, the top aroma of minerals like inorganic ore.
When you drink it, it has a beautiful attack, a sweet and sour taste like a rich white wine, and the sense of aging of the rice spreads slowly and disappears smoothly.
Personally, I have a weakness for aged sake, but this flavor seems to overcome that.
Kenkunichi Junmai Usu Nigori Namazake
It has a refreshing fruity aroma that goes straight through, and in a good way, you can smell the scent of a summer pool.
When you drink it, you will feel the sweetness of muskmelon from the soft nigori.
At the end, you feel the crisp alcohol.
Even though it is lightly nigori, it has a strong personality and is one of my favorites.
Atago no matsu Harukoi Junmai Ginjo
As you can see, it has a milky and sour aroma.
I mean strawberry yogurt!
It has a strong fizzy feeling and strawberry yogurt.
A sake that you would not think is sake!
Fudo Naokumi Junmai Daiginjo Nama Genshu - 33% Yamada Nishiki Polished Rice (333rd Anniversary Commemorative Sake)
Clear apple and pineapple aroma with a good balance that is not too overwhelming.
When you take a sip, you get the impression of roundness, then a slight fizzy feeling, sourness, and pineapple aroma coming through the nose, but not an obvious sweetness.
It also has a bitter taste with a hint of alcohol and a good sharpness.
It is a type of sake that can be enjoyed by itself or with food.
Mimurosugi Junmai Ginjo Origarami Nama Hana-Kyun
A fresh and moderate banana aroma on the nose.
When you put it in your mouth, the fresh fizzy feeling and the aroma of banana spread out, and the aftertaste is the image that the sweetness of the banana spreads softly, and the pleasant bitterness is cleanly swept away by the fizzy feeling.
Plus, it has no spikes at all, as if it were origarami.
This is the best sake to change the bad image of sake.
Isn't there a Japanese person who doesn't think that this is delicious...?
Matsu no Tsukasa Selected Junmai Ginjo Arabashiri Raw
At first, you can feel the sweetness and freshness of melon and gourd at the beginning of the aroma, but it breaks in a moment and the rest is easy.
When you drink it, you will feel the sweetness of banana from the bottom of the basic minerality, and the bitterness of the minerality and a little bit of alcohol will spread slowly and comfortably, but there is no unpleasant aftertaste.
Arabashiri Nama is a precious position of Matsu no Tsukasa, which is gorgeous but also good as a food sake.
Takachiyo Junmai Ginjo Unadjusted Raw Sake AIMACHI
It has a freshness that is typical of fashionable sake, a sweetness that is full of nigori, and a slight woodiness. It has a slight woody aroma.
I think it's been a while since it was opened, but you can feel a little bit of foam on the tongue, and the aroma of fresh white grapes and the round taste of nigori live together.
Takachiyo is delicious no matter what you drink...
Kudokutake Junmai Daiginjo Dewa Sanzu 33
(Yeast: Ogawa 10, M310)
A gentle honey-like sweetness is felt at the bottom.
On the palate, the sweetness, aroma and a little bitterness spread slowly in a refreshing mouthfeel that is basically clear and acidic.
It has a good balance.
Tatsusen Junmai Ginjo Nakadori Unfiltered Raw 2021 Tatsu Label No.2
Sweetness and freshness reminiscent of ramune
In the mouth, it has a clear aftertaste with a solid alcohol feeling and a sweetness and taste of ramune compared to Amago no Tsuki.
The aroma and taste are more pleasant than the image of Gohyakumangoku.
I've never had this brewery before, but it's well put together.
That's Fukushima!
Amago no Tsuki Junmai Daiginjo Omachi 13
(Collaboration with Kamo Kinshu)
The initial aroma has a hint of melon.
When you drink it, the slight fizziness that is typical of a nama-ginjo brings a melon aroma to the nose, while the minerality and acidity clear the mouth and build up the balance.
It's so good that it's hard to comment anymore... A sake that both enthusiasts and beginners will find delicious!
Tazake Junmai Ginjo White Koji Brewed Raw
It has a clear aroma with a line of acidity.
When you taste it, you can feel the aroma of citrus and sourness, a hint of ripeness and sweetness, and it disappears without any strange alcohol or bad taste.
I wonder if the white rice malt can be made so well with this kind of sake... (amateur's impression)
W Junmai Chikara
The aroma reminds us of a rich sweetness in a slightly muddled sense rather than clarity.
When you taste it, you can feel the fresh pine scent, but on the tongue, you can feel the strong sweet bitterness with a sense of ripeness.
It is up to you whether you think it is twice delicious in one taste or whether you think the aroma and taste are different.
USUKI Special Junmai Nama Genshu
Banana aroma with a sense of ripeness
After that, you can feel the stimulation of alcohol and the tanginess of the rice, and it leaves the aroma behind.
Probably good if you raise the temperature.
A little bit sharp, maybe? It may be.
Five Junmai Ginjo Nama Sake
Rich banana aroma
The fresh banana aroma spreads from the mouth to the nose with a slight firing sensation of raw sake.
You can feel the aftertaste of the aroma, but it doesn't leave a sticky sweetness, it leaves a little bitterness on the tongue.
A very good one!
Yusa Junmai Ginjo
The aroma of fresh white grapes and apples is fluffy, but not that strong.
When you drink it, you feel a little rich and ripe sweetness and refreshing acidity.
However, the sourness and minerality are so strong that only a little sourness remains in the mouth.
It is fragrant, but it can be used as a food wine.
Saku Enochi Junmai Ginjo
Cape-like sweet and sour, like white wine? It has a fresh aroma like an apple.
It has a refreshing sweetness that stands out on the palate and leaves you with a refreshing aftertaste.
There is no doubt about the quality of the sake.
YAGOOO Junmai Ginjo Namaha
The aroma is flat with acidity and clarity.
It has a soft entry and a milky taste like yogurt like a traditional sake brewer, without any persistence or sweetness.
It is very easy to drink.
