When drunk without lees, the wine has a slightly dry taste with a strong sense of gas and acidity. When mixed with lees, it softly mellows out and the sweet, juicy fruitiness increases. This is the first time I have had Kamo Nishiki other than packaged sake. There is not much information on the label, but I see that this is a regular sake. While Kamo Nishiki is fresh, modern, and fruity, this one has a more classic, light, dry flavor. It was served at room temperature, but it has a strong acidity and a delicious rice flavor, and it seems to go well with all kinds of dishes, making it a good sake for a meal. 3.5 / 5.0

Kikuhime no Hime, which is a regular sake. Good aroma of sweet baked sweet potato-like caramel. It has a matured sweetness and plenty of umami. The alcohol content is lower and the taste is lighter than that of Kikuhime Junmai, which is a very robust sake, so you can easily drink too much without getting tired of it. When you drink it when you are tired, you will feel it soak into your body and heal you. It makes me happy and relaxed during my daily evening drinks. It is cool that they do not cut any corners even for regular sake, such as using special A Yamadanishiki from Yoshikawa for the malted rice and maturing the sake in Yamahai. 4.5 / 5.0

Like the Hakurakusei Junmai Daiginjo we had earlier, it has a beautiful sweetness, but I felt this one had a little more sweetness and acidity. However, as one would expect from Hitakami, the sharpness is outstanding and it cuts through the fat of the fish. I paired it with sashimi such as tuna and amberjack, and it was absolutely delicious. Sake brewed in Omachi has an image of being rich and rich in sweetness and umami, but this one has a clear taste as if it were drinking high quality natural water. However, there is nothing lacking in the flavor, and the elegant sweetness disappears with a strong sense of acidity. Considering the price, I would like to savor it slowly, but it is so delicious that I find myself drinking more and more of it. This was the first time I was told to be "very careful when opening the bottle" when purchasing sake from a liquor store. There was a tag on the bottle with instructions from the brewer on how to open the bottle using an ice pick, so I followed the instructions and managed to open the bottle without exploding, although there were a few dangerous moments along the way. The aroma is a nice apple aroma. It tastes like a carbonated lactic acid drink with a green apple flavor. The dry, low sweetness makes it a perfect match with food. 4.0 / 5.0
