I had an image of packaged sake as an aromatic, fruity, sweet-tasting sake, but this Tsukihaku is considerably less sweet. The aroma is also mild, but it has a nice aroma that is typical of packaged sake. It has a clean, light flavor that goes well with meals. 3.5 / 5.0

While the sweet and sour taste of the nama-shu (zero type) stood out, the hi-iru (one type) was clean and refreshing in comparison. Considering the juiciness of the nama-shu, the impression was quite subdued. However, the sweet and sour taste like grapefruit juice is still the same, and it can be drunk all the time without any snacks. The fire-roasted version was as tasty as expected. 4.0 / 5.0

We have had Junmai and Junmai-Ginjo nama-shu from Wakanami, and this Yamadanishiki is also very tasty with a fresh and beautiful acidity. It was less sweet than the junmai ginjo nama-shu, and seemed to have an even better balance with the acidity. I would like to enjoy the standard hi-ire next. 4.0 / 5.0

Although it is labeled "fully fermented," it is not without sweetness, and when you take a sip, you can feel a gentle sweetness along with a cool aroma. The sweetness is felt and then disappears, followed by the spiciness, and then the sweetness is again felt and then disappears again. This endless loop makes it hard to stop drinking. This is a freshly squeezed Honjozo unfiltered unpasteurized sake with 19 degrees alcohol by volume. Just hearing about it makes me excited. Imagining a robust sake with a rich sweet taste, I drank it and found it to be sweet in the first half, but in the second half, it quickly turned spicy and quite sharp. I was planning to drink it in small sips, but it went well with a meal and I drank too much. 3.5 / 5.0

It is said to have acidity at its core, but it also has a moderate sweetness and is very well balanced. When drunk without lees, the wine has a slightly dry taste with a strong sense of gas and acidity. When mixed with lees, it softly mellows out and the sweet, juicy fruitiness increases. The slightly carbonated, low-alcohol content makes it easy to forget that it is sake and drink it in a gulp. It is truly a fresh rice juice. 4.0 / 5.0

The freshness of the sake is good, but the flavor increases day by day after the bottle is opened, so it is good to drink it slowly over a long period of time. This is the first time I have had Kamo Nishiki other than packaged sake. There is not much information on the label, but I see that this is a regular sake. While Kamo Nishiki is fresh, modern, and fruity, this one has a more classic, light, dry flavor. It was served at room temperature, but it has a strong acidity and a delicious rice flavor, and it seems to go well with all kinds of dishes, making it a good sake for a meal. 3.5 / 5.0

I came across Aizan Jikin by chance. It is very rare to find it, so I immediately decided to purchase it. It has a clear sweetness, but it also has a sourness and bitterness, and the aftertaste is not long, so you don't feel the sweetness at all. After all, Jikin is delicious. I don't know when I will be able to drink it again, so I took good care of it. 4.0 / 5.0

Kikuhime no Hime, which is a regular sake. Good aroma of sweet baked sweet potato-like caramel. It has a matured sweetness and plenty of umami. The alcohol content is lower and the taste is lighter than that of Kikuhime Junmai, which is a very robust sake, so you can easily drink too much without getting tired of it. When you drink it when you are tired, you will feel it soak into your body and heal you. It makes me happy and relaxed during my daily evening drinks. It is cool that they do not cut any corners even for regular sake, such as using special A Yamadanishiki from Yoshikawa for the malted rice and maturing the sake in Yamahai. 4.5 / 5.0

It is quite active. Automatic stirring when the cork is opened. After opening and closing the bottle about 10 times, it finally settled down. On the first day, it tasted fizzy and dry. On the second day, it was slightly effervescent with a melon-like flavor, and the balance was just the way I like it. On the second day, it becomes moderately slightly carbonated, with a distinct sweetness and umami, both of which are very tasty. Like the Hakurakusei Junmai Daiginjo we had earlier, it has a beautiful sweetness, but I felt this one had a little more sweetness and acidity. However, as one would expect from Hitakami, the sharpness is outstanding and it cuts through the fat of the fish. I paired it with sashimi such as tuna and amberjack, and it was absolutely delicious. I would definitely recommend this fish and hidakami. 4.0 / 5.0
