On the day of its release, I went to a liquor store and found that they had already sold out of the 1.5 liter bottles, so I got a 4.5 liter bottle first. I was so pleased with the taste that I was tempted to buy a full bottle. Even though it is nigori sake, it is not heavy at all, but rather light and refreshing. Last year, the alcohol content was 16%, but this year it is 15%. Personally, I prefer the 15% alcohol content this time because it is well-balanced and goes well with food. 4.5 / 5.0

The limited edition Hakurakusei is released at the end of each year. The color of the label also looks like the early evening sky at this time of year, indicating that the end of the year is near. The regular Hakurakusei Junmai Ginjo is 55% polished rice, but this one is 50% polished rice. One would think the taste would be more delicate, but perhaps due to the use of Omachi, a beautiful umami flavor can be felt. This bottle is highly recommended for those who like Hakurakusei as usual, but also for those who find regular Hakurakusei insufficient. 4.0 / 5.0

Like Senkou Classic, it is sweet and sour, but this one is more pronounced in both sweetness and acidity. It has a stronger sweetness and less bitterness than the classic. I enjoyed it more as a stand-alone sake than during dinner. Sake really has a lot of depth to it, as it is possible to get this flavor out of rice. 4.0 / 5.0

Following Senkori, here is another much talked about sake, Iraka Shuzo. We carefully enjoyed this sake for about a week. It has a nice fruity aroma. As soon as you put it in your mouth, the umami comes straight in. It is very fruity with a refreshing sweetness and moderate acidity. It is smooth and very tasty on the palate. Another sake I am looking forward to drinking in the future. 4.0 / 5.0

It is very gassy and quite schwishy. It is sweet and sour, and the bitterness comes out in the second half to reset the palate in a nice way. It makes you want to take the next sip right away. Since it is an Edo-style sake, I thought it would go well with Japanese food, so I had it with some vegetable stew that I had at home, and it went very well. 4.0 / 5.0

Refreshing sourness like apples. When the lees are mixed, it mellows out and the flavor improves. It is delicious. I thought it was sweet at first sip, but as I continued drinking, it became moderately dry and I enjoyed it more as a food sake than as a stand-alone sake. 3.5 / 5.0

The long-awaited new sake from Atago no Matsumatsu was served with grilled autumn fish. It was fresh and fruity. The umami of the orikara flavor combined with the umami of the ingredients made it a perfect match for the meal. It went very well with the meal.
