Saga Prefecture Yuyu Chisai Junmai Ginjo Origarami Nama This is the second Yuyu Chisai Origarami Nama this year. It's a collaboration between Kiyama Shoten and Saga University, and they use malic acid developed by Saga University's Faculty of Agriculture. It has a sweet and sour taste like an apple, and it's really delicious. I think you can find it at Saga University Co-op, so please buy it.

Gifu Prefecture W - Junmai Yamadanishiki - Fire in the Bottle I have drunk this beer a few times at the store, but this is the first time I have bought it in a bottle. The taste is modern and fruity, but there is a heavy alcohol aftertaste. It has a freshness that you don't feel from the fire. I'd like to try it fresh.

AKABU MOUNTAIN,Iwate Prefecture AKABU's summer sake. Sweet and sour, juicy and well balanced. It's one of the best I've had recently. I can't take my eyes off Akabu. You should buy it if you see it.

Toyama AKEBONO SUMMER SPECIAL Junmai Daiginjo Namazake Lightly foamed nama-shu with origarami. It has a rich and thick taste. The alcohol is strong and the taste of rice is strong. It is the opposite of the image of summer sake, but it is good.

Fukushima Niida Shizenshu Shizenshu Ikeban Junmai Ginjo It is a fire-retarded version of a traditional sake, but it has a gentle sweetness and a good acidity, making it somewhat classic, but with a strange modern touch. I think the taste is quite different between freshly opened and the second day.

Okayama Prefecture Kamishin Midsummer's Fruit Junmai Ginjo Unfiltered Raw Sake This sake was made by wearing an aloha shirt in the hope of "delivering even a little excitement" at the Corona disaster. The brewer said it didn't taste like lychee, but the sweetness of the unfiltered sake and the acidity from the No. 77 yeast were just right, and the lychee flavor was surprisingly good.

Fukuoka Prefecture Yamanokotobuki Freaks 1 Plus This is a challenge sake from Yamanotobuki that Fukuoka residents are familiar with. Specifications are undisclosed. It's a slightly fizzy muddled sake with a pleasant fizzy feeling and well balanced acidity and sweetness. I like the taste very much.

Hanahato Fruits "muskmelon", Hiroshima Prefecture This is the first time I drank the brand "Hanahato". It was a good day for pigeons. It's not so much juicy as it is full of the flavor of the skin of the melon. It's not my favorite type.

Gifu Prefecture Hyakujuro Fruits - Lemon & White Grape This is a lemon and white grape from Hyakujuro's Fruits series. It is a dry, sour sake with a refreshing taste, but it also has a strong umami and bitter taste. It's not my favorite sake, but it goes well with hot sake.

Tochigi Prefecture Mochi Splash! Junmai Daiginjo Hi-ire This is Nozomu from the Concept Workers series. From the name "Splash" and the label, I imagined it would be a schwa-schwa, but it is not. The mouthfeel is thick, but it has the gorgeous ginjo aroma and rich flavor of a daiginjo. I didn't know this, but all Nozomu are 16% alcohol by volume.
