Tochigi Prefecture Modern Senkou Muku 2021
I haven't actually had a lot of Senkou, but my initial impression of it was that it was a dry sake with little flavor, but after drinking it over a few days, I realized how good it was. It's a new dry sake rather than a classic dry sake as the name suggests. I gradually came to understand how good it is. Sake is deep!

A fruit series of Omachi rice from Okayama. Even though the rice polishing ratio is 65%, it has a complex taste of peach and apple. This is a cup that shows the depth of Omachi.
Nagasaki Yokoyama Goju Junmai Daiginjo WHITE Lightly Nigori Raw
Nagasaki is a new sake brewery revived in Iki in 2018. A modern, sweet Yamada Nishiki Junmai Daiginjo that stands out. Yokoyama is delicious no matter which one you drink. The newest type of sake. The newest brewery in Japan? It was recently said to be the newest brewery in Japan, but I wonder how it is now. I think the sweetness is similar to that of Fukuda in Nagasaki.
Yuki no Kayasha Yamadaho Junmai Ginjo Nama - Akita Prefecture
This sake is made from Yamadaho, the mother of Yamada Nishiki. It has a classic taste. The acidity is good.
Hanaup Junmai Sake Rikuhada - Akita Prefecture
I've never heard of Rikuhada rice before. I looked it up in the sake rice handbook, but it's not listed. The aroma is fruity and delicious like Hanamura, but I'd like to try it raw.
Miyagi Miya Kanbai Junmai Daiginjo 40% 贅沢撰
This sake has a sweet but clean aftertaste. It is a beautiful sake with a sweetness but a clean aftertaste. It's a nice, expensive sake. I've been drinking a lot of Miya Kanbai lately. I like it.
La Maison is usually Omachi, but this year it is limited to Yamadanishiki. It's not as juicy as the other sakes, but it's refreshing and easy to pair with meals. There is often a saying that it is the ultimate sake for eating, and this is the perfect word for this sake.
Shiga Prefecture Shoki INTENSE 620 Grape Namazake
This is a nama-shu using Shoshiki's original yeast "620 yeast" which is a mutated strain of yeast No.6. When you stare at the bottle and drink it, you can really taste the grape. There is also peach, so I'm curious.
Rz50 Junmai Ginjo Sweet Emotion - Ver Gohyakumangoku - Akita Prefecture
This is a sweet version of the same series. It is amazing that the taste can be changed so much though it is the same rice. How on earth is it done? This is why I can't quit drinking sake.
