Hokkaido's Goho Goho. Today's is Junmai Ginjo. But the rice is polished to 50, so it's really a daiginjo🤤. Perhaps it was the label, but the initial aroma was of grapes, and the mouthfeel was soft, yet mellow and full in the mouth. Definitely a delicious cup!

Famous sake from Toyama, Manjusen The other day, I traveled to Toyama. The sushi was delicious, as was the sake, and Hokuriku is full of delicious food. Ramen in Himi. Ramen in Himi, seafood in Takaoka, and sushi in Toyama. So many things to do. And there I met the first turtle! Turtle No. 1" is another name with no fancy fancy, but let's see what it tastes like. Alcohol 16 degrees. As is typical of nama-shu, it is slightly acidic and fresh. Although it is 50% polished rice, it is not only clear and sweet, but also has a variety of flavors dancing in the mouth. This is also where the umami comes in. It is a very enjoyable sake!

Kiku no Tsukasa Innocent This is my first sake, but I bought it without a second thought because of the design of the bottle, which gives the sake brewery a sense of challenge. I buy bottle designs like this 🥴. The aroma in the glass is subdued. The aroma in the glass is restrained, and when you sip it, you can feel the clear, fresh sake-like flavor without any peculiarities. The rice used for the sake is not stated, but it seems to be Gohyakumangoku. Sorry if I'm wrong 🙇. As the label says, it is a very well-balanced sake, and I felt it complemented the food.

Goho has been on my mind since I was allowed to drink it by a familiar owner near Osaka Tenmangu Shrine. Goho.... The jacket is stylish and looks easy to drink 😆. The rice used is "Kitsushizuku" from Hokkaido. This one is quite dry and full-bodied. The palate has an atmosphere that is not overpowered by the food, but has a pleasant aftertaste. Personally, I found it an excellent match for cheese. 😄

Junmai Daiginjo Yamadanishiki 50 ORIGARAMI Un-filtered Nama-shu This year's Denshogiku is said to be dangerous. Be careful of spilling ❣️, so I cooled it down and opened the bottle slowly, letting it acclimate to the lees. The aroma was very fruity and fermented, which is typical of orikara. The acidity and umami are overwhelming the palate! The acidity and umami rush into the mouth. The sweetness of the chrysanthemum was subtle and subdued, and it was quickly cut off at the end.

Kaze no Mori I have always loved it. How many bottles of Omachi, Aizan Junmai Ginjo Junmai Daiginjo, etc. have I had? I've been away from it for a while since they started using low milled rice such as 80 a few years ago in pursuit of more complex flavors, but I'm going back to where I started, Let's start with alpha1👍 Alcohol 13%. Aroma of apple and fizziness typical of Kaze no Mori. Akitsuho with 70% polished rice. It has little bitterness. Delicious!

Omachi Trilogy - Yeast Version Alcohol 12 Polishing rice 65 Gozenshu, a sake we have not had much luck with It is a sake from Okayama, and is made from Omachi, a famous sake produced in Okayama. I happened to find it at my favorite liquor store. I bought it immediately. The word "kanzo" is written on a large styrofoam bottle. When you break it in two, you find a cool-looking bottle of kagura inside. The bottle is not filtered at all, so it is said to have a faint, young grass color derived from koji (malted rice). Sake rice is 65% polished rice. It has a clear drinking taste that is hard to believe it is 65. It has a fresh mouthfeel and a sweet, savory, yet refreshing finish. I remember it was the No. 1 sake at a sake event at Matsuo Taisha shrine in Kyoto this spring. I am very proud of its ability and I am hanging my head 🙇.
